Berries Banana Muffins๐Ÿ˜‹
โ €โ €โ €โ €
Amazing as an afternoon snack or even breakfast. Youโ€™ll have 12 muffins depending on how big you scoop them. Each muffin has around 130 calories, 6g fat, 23g carb, & 4.5g protein.
โ €โ €โ €โ €
Ingredients:
โ€ข2 cup oat flour (or 1 cup almond flour & 1 cup oats)
โ€ข1 tsp baking soda
โ€ข1 tsp baking powder
โ€ข3/4 tsp salt
โ€ข3/4 tsp cinnamon, optional
โ€ข2 mashed overripe bananas
โ€ข1/2 cup liquid sweetener
โ€ข1/2 cup milk of choice
โ€ข2 tsp vanilla extract
โ€ข1/2 cup berries of choice, fresh or frozen
โ €โ €โ €โ €
Instructions:
*Preheat your oven to 180*C.
*In a large bowl, combine all dry ingredients.
*In a separate bowl, whisk the wet ingredients except for the berries.
*Pour wet into dry and stir to form a batter.
*Very gently add the berries, stirring only enough to incorporate them, so as not to break the berries and turn the entire loaf purple.
*The batter should make around 12 muffins. Bake on the center rack for 30-45 minutes depending on your oven.
*Let cool completely, then loosely cover so there is room for moisture to escape.
*Taste and texture will be much better the second day and even better the third day as it will get sweeter (if they stayed that long๐Ÿ˜‚), and Iโ€™d recommend refrigerating after a day, for freshness.

But these habits, and the associated lifestyle, took more than 2 years to solidify to the point of โ€œlittle effort.โ€โฃ

Now that I have all these habits โ€” thinking back on HOW I got to this point, the most important thing for me was that...โฃ
it all meant something to me.โฃ
