Try Personal Trainer Leah Whitfield's Healthy Protein Apple Muffins this weekend. So simple and delicious 😃!

Simply stir together in bowl:

* 4 Granny Smith apples finely diced
* 200 grams oats
* 90 grams vanilla protein powder (Leah used White Wolf Vegan Protein Powder)
* 30 grams chia seeds
* 60 grams melted coconut oil
* 200 mls hazelnut coconut milk (can be replaced with any variety of milk)
* 4 large eggs
* 1/2 tsp cinnamon powder
* 1/2 tsp vanilla
* 1/2 tsp Himalayan salt

Pour mixture into muffin tin and bake on 180 degrees celsius for approx 30 mins or until cooked through - ENJOY 😍!!

HEALTHY CACAO CUPCAKE BROWNIES

Try Personal Trainer Leah Whitfield’s healthier alternative to your typical chocolate cupcakes this weekend 🍫. With Easter just a few weeks away these are a delicious healthier chocolatey treat 😃

Stir together:
*2 eggs
*2 tsps vanilla extract
*¼ cup olive oil
*¼ cup almond milk
*¼ cup maple syrup

Then stir in:
1 ½ cups almond meal
¼ cup cacao powder
1 tsp baking powder
Up to 1/4 cup crushed walnuts (depends how nutty you like them)
1/2 packet crushed dark chocolate pieces

Spoon mixture into cupcake tin and bake at 160 degree celsius for approx 25 mins - ENJOY 😃

Simply blend:
* 1/2 cup of cacao powder;
* 1 tsp of vanilla powder;
* 1/4 cup of honey;
* 3/4 cup of coconut oil;
* 3/4 cup of your favourite nuts; and
* a pinch of Himalayan salt.

Pour into chocolate mould and freeze for at least 1/2 hour - ENJOY 😃

Simply mix together in bowl:
- 2.5 cups oats
- 1/4 cup chia seeds
- 1 cup of your favourite dried fruit (ie. goji berries, sultanas, dates etc)
- 1 cup of your favourite nuts/seeds (ie macadamia nuts, pumpkin seeds, sunflower seeds etc)
- 3/4 cup maple syrup
- 2 Tbsp melted coconut oil
- pinch of Himalayan salt, vanilla powder and cinnamon

Spread mixture on tray and bake in oven on 180 degrees celsius for 20-30 mins or until golden brown and delicious. ENJOY 😍!

HEALTHY CARAMEL BANANA COCONUT BREAD 🍌🍞

Try Personal Trainer Leah Whitfield's Caramel Banana Coconut Bread this weekend! Want to get in shape? Then contact Leah today on 0430464400 or [email protected] 💪😊

First make banana caramel by simmering on low heat in pan for approx ten mins (keep stirring):
- 2 large ripe bananas chopped into small pieces
- 3/4 cup maple syrup
- 100 grms macadamia nut oil

Take off stove and leave to cool slightly.

In a separate bowl whisk together:
- 3 eggs
- 20 grms macadamia nut oil
- 2 Tbsp almond milk
- 1 tsp vanilla essence
- 1/2 tsp cinnamon

Stir into wet mixture:
- 1.5 cups of almond flour
- 3/4 cup shredded coconut
- 1 tsp baking powder

Then stir through caramel banana mixture until combined.

Pour combined mixture into greased loaf tin & bake on 180 degrees celsius for approx 50 mins or until cooked through, golden brown & delicious! Drizzle maple syrup on top before serving & ENJOY 😍!

Great snack idea 😃

Stir together the following ingredients, place on tray, spray with coconut oil and bake in oven for 10 - 15 mins on 180 degrees celsius until lightly toasted:

* 1 1/2 cup mixed nuts i.e. cashews, almonds (pick your favourites)
* 1 1/2 cup mixed seeds i.e. sunflower seeds, pumpkin seeds (pick your favourites)
* 2 cups of grains i.e. puffed quinoa oats (pick your favourites)
* 1/2 cup coconut flakes
* 1/2 cup goji berries

Stir mixture together with:
3/4 cup maple syrup
5 Tbsp cashew nut butter
1/2 tsp vanilla essence
1/2 tsp cinnamon

Pack the mixture in tray lined with baking paper and leave in fridge until set. Slice into bars & ENJOY 😍

* 1/4 cup coconut flakes
* 1 Tbs flaxseed meal
* 1 Tbs almond meal
* 3/4 cup crushed nuts i.e. cashews, almonds (pick your favourites)
* 1/4 cup mixed seeds i.e. sunflower seeds, pumpkin seeds (pick your favourites)
* 1 1/2 cups of grains i.e. oats, puffed millet (pick your favourites)
* 1/2 cup dried fruit i.e figs, sultanas (pick your favourites)
* 3 Tbs maple syrup
* 3 Tbs coconut oil
* 1/2 tsp vanilla powder
* pinch of celtic salt

Let it cool and serve with coconut yoghurt & fresh fruit 👌😊!
