Holds up pretty well for 20yrs of age.
Fat fallow cutlets and loin chops...... best time of year to be putting these fatties on the ground and in the fridge.
More than just backstraps and mince.... take your time, learn some new skills and make what you take from the bush supermarket into food you will enjoy every day of the week.

Quality fallow at this time of year!
Shoot, hang, butcher and eat...... daily cycle here. Can rotate 6 in the fridge so they get a week of hang time before my belly.

Fallow fawns on the board this morning. Plenty of these about atm and they make for some good eating too.
