So good. I had to share this super easy Cod Picata recipe

Ingredients:

Cod fillets
1/2 cup along Flour
1 tsp sea salt
Olive, veg, avocado, canola oil (to cook fish)

For sauce:
1 cup chicken stock
3 tbsp lemon juice
1/3 cup capers drained
1 tsp grapeseed oil
1 oz Brandy (optional) I used some of course
1 tbsp Maple Syrup (optional)
Parsley or dill for garnish.

Directions:

Dredge your dried dillets in almond/salt combo, and cook in a skillet coated with oil of your choice above medium high heat for 2-3 minutes per side until browned. This beautiful fleshed fish cooks quickly. Remove, set aside, and keep warm. Cook the fish in batches to make certain your fillets don't fall apart. Keep the brown bits in the bottom of the pan.

For the sauce, in the above skillet, add stock, lemon juice, and capers. Bring to a simmer and reduce by half or more. Add the Brandy and Maple syrup if you want to cut a bit of the acidity of the sauce. Adjust your seasonings if you want. But this sauce is light and slightly acidic.

Divide and plate your fillets drizzle with sauce and finish with a garnish of choice. I loved the dill garnish with this recipe.

Serve alongside some rice, risotto, fluffy mash potatoes, and with a colorful side of your choice. Green beans with sliverred almonds or glazed carrots would work well.

The fish is the star of the plate.

Costa Rica 2024. A few pics of the stunning region of Playa Carillo and Samara CR. Thank you to our host at Hillside Oasis for the spectacular accommodations. The views overlooking the valley with breathtaking sunrises and nature on full display with Howler monkeys, geckos, iguanas, countless birds, and butterflies were definitely calming to the mind and soul. Obviously, we found a new appreciation for coffee during our tour.

Lobster bisque

Ingredients: Lobster tails (5 in this one)
2 celery ribs, 2 large carrots, 2 leeks, 1 fennel bulb, 2 white onions, 1/2 cup Cognac, 1/3 cup Sherry. 6 cups of Veg or Chicken stock, or lobster stock, 3 tbsp tomato paste, 6 + 3 tbsp unsalted butter, 1.5 cup heavy cream, chives for garnish. Herb sachet includes 4 tbsp Arborio Rice, 20 peppercorns, 3 bay leaves, 6 parsley stems, and 5 thyme sprigs in cheesecloth sachet.

Directions:
Cut tails in half to extract meat, then cut into chunks. Keep shells. Poach meat in 6 tbsp butter on low heat for 3 min . Remove from butter.

Turn heat to medium, add chopped onion, celery, carrots, leeks, and fennel and cook for 8 min. Season with pinch of Kosher salt. Add tomato paste and cook for another 2 minutes

Add Cognac, Sherry, stock and herb sachet, and shells. Bring to boil and then turn down heat to simmer 40 min with lid slightly vented.

Remove shells, herb sachet (squeeze juice from sachet), and transfer to blender to mix until smooth.

Add heavy creme and warm further, slowly adjust seasoning. You can add 3 tbsp of cold butter to make it super velvety (optional). Add lobster meat and then serve hot topped with chives.

Pandora came as advertised. She is a super social dog, high energy, very affectionate, and an absolute joy to have around. She was a great sous chef or an assistant for yard work. She was definitely my shadow all weekend from the kitchen and into the yard. She is a high-energy dog and after 15 km of walks this weekend she was I think tired....or maybe that was me. She was able to participate in a charity walk as well this morning.

She is a sweetheart and will make a great dog for a lucky family. We had to bring her back to early so she could go with a longer-term foster, which is great news. She will always be welcome in our home.

Final NALA UPDATE.

After almost 11 months with her, it looks like Nala may have found her furever home. We couldn't be more excited for her as she embarks in this new chapter in her life. A new life filled with love and calm, which she desperately needs along with another dog to play with.

We will miss her quirky smile and although after 11 month I was never able to hug or snuggle her she will always be part of our family.

Fostering NALA UPDATE.

Nala was back home with us for Family Weekend. I am pleased to say that we did not have to coax her to get in the truck to come with us Friday....I am hoping it was because she missed us.

She got to experience all of the kids, boyfriends, and friends this weekend, and I won't lie I think at times it was a bit overwhelming for this beautiful gal. Nevertheless she got her own new doggy bed, which she thoroughly enjoyed... but yet remains upstairs overlooking the kitchen activities. She had many long, healthy walks and lots of petting and rubs from the ladies in our household. She is still quite apprehensive around me. However, and were able to get a few pets in there. It is heartbreaking to see how she gets so scared even when meeting any male out on the road or a trail. She even dragged Lizette into the deep snow as a man approached us.

Overall I am calling this a success. She slept out of her crate peacefully last night without much fuss. She actually never fusses about anything, no growling, no barking... the kindest soul.

The last pic is when we had to bring her back to the shelter....I think she was genuinely sad to go. Our reality is such that she has to go back...at least until we pick her up again.

If you would ever consider fostering her she would do great in a quiet household, she is also great with other dogs and we know she does very well with women...but would also be fine with a male presence from a distance.

We will keep working with her until she can find a furever home.

CUTENESS ALERT
Look at these cute little faces that just arrived at the shelter while we were out walking some dogs.
Now, the harsh reality. 7 pups came in from a Northern Community, and these pups had a 20-hour journey to get here, to some food, water, and a bath. If the shelter did not take them in, their fate would likely not be pretty. The shelter has no room for them, and they inquired with other shelters down south, and they are all overrun by rescues. The worst is that they expect two other litters of pups in the next few days with nowhere to put them.

We took two gorgeous 1 yr old huskies for a walk. Balto and Akira were loving the snow, and Balto definitely never wanted to be trailing. We then took Peanut, walked by .rheault, and I walked Nala again. We took those two out last week, and it is devastating to see how fearful they are of humans, as you can see with Nala's demeanor. At least .rheault was able to pet Peanut for the first time.

The shelter is in desperate need of towels and bedsheets as evidenced by the pups all requiring baths upon arrival. If you have some and want to drop them off at my office, I will be happy to bring them to the shelter....or better yet, take a drive out and come meet these beautiful dogs!

Soggy Saturday is for cooking.
Finally decided to return one of the LCBO recipe Seafood and Squash Gumbo.
Chock full of flavour with some tweekibg of course. Worth doing again. May as well do a butternut squash soup while at it.

Tomorrow I want to smoke ribs for two families, but there's a catch.

I want to trial 4 different sauces and l want your honest opinion and feedback for these sauces.

If you dare to try em, bring me your racks and I will smoke em for ya'll.

Racks will need to be dropped off this evening or tomorrow morning by 10 am and then picked up by 530 pm. Bring a small cooler for the ride home.

DOING OUR PART

COVID Vaccination Clinic.

Yesterday we were able to administer 132 doses of Moderna Vaccine to Sudbury residents.

Thank you to .rheault and Tina McKinnon for all your help, patients were certainly appreciative of your efforts.

Despite some apprehension, fear of needles and concerns about vaccine safety and efficacy these patients were educated and reassured about the benefits of vaccination. All were successfully vaccinated and you can definitely appreciate the relief they had afterwards.

They are one step closer to becoming immunized and protecting themselves and their loved ones.

These 132 individuals are heroes in my opinion in getting us closer to herd immunity allowing everyone to return to some normalcy in the near future.

Let's keep it up Sudbury.
