Colin and I absolutely love our beautiful walks together. There’s something so refreshing about waking up each morning to that perfect crisp temperature in the early fall, putting on a cozy  jogging outfit and heading out to enjoy our incredible city. From the colourful pathways of Major’s Hill Park to the beauty and history of Parliament Hill, every step reminds us how fortunate we are to call Ottawa home.
We continue along the peaceful Rideau Canal before making our way back to the ByWard Market for a delicious breakfast and a wonderful cup of coffee. Sharing these simple moments with the love of my life makes my heart feel full—life truly doesn’t get any better than this.

After a busy morning, we make some comfort food
super yummy 😋 

Creamy Garlic Lobster Stuffed Shells

Ingredients

7 jumbo pasta shells
1 cup cooked lobster meat, roughly chopped
½ cup ricotta cheese
⅓ cup shredded mozzarella
¼ cup grated Parmesan, divided
1 tablespoon butter
2 cloves garlic, minced
¾ cup heavy cream
½ teaspoon Italian seasoning
Salt and freshly cracked pepper
1 tablespoon chopped fresh parsley

Directions

Preheat the oven to 375°F (190°C). Cook the seven pasta shells until just tender, then drain and cool slightly.
Combine the lobster, ricotta, mozzarella, half the Parmesan, half the parsley, salt, and pepper. Gently fill each shell.
Melt the butter in a saucepan and cook the garlic for about one minute. Add the cream, Italian seasoning, and remaining Parmesan. Simmer gently for three to five minutes.
Spoon a little sauce into a baking dish, arrange the seven stuffed shells inside, and pour the remaining sauce around them.
Cover loosely with foil and bake for 20 minutes. Uncover and bake for another 5 minutes, until hot and lightly golden.

Finish with fresh parsley, cracked pepper, and a little Parmesan. This makes a beautiful dinner for two.

These magnificent creatures were nature’s original works of art, sculpted by time and preserved in stone. Every fossil tells a story, every bone carries a mystery, and every towering skeleton offers us a glimpse into a world that existed millions of years before our own. I have always been fascinated by dinosaurs, and seeing them so beautifully displayed awakened that childlike sense of wonder and creativity within me.
Ottawa is a living canvas filled with history, culture, beauty, and adventures waiting to be discovered. Sometimes the greatest inspiration is found simply by stepping outside, exploring your own city, and allowing your imagination to lead the way.
