Try this delicious Amplify-inspired matcha lime vegan cake, created by Caleigh Megless Schmidt, founder of , a Paris-based studio known for its understated, plant-based approach to contemporary food. Light, refreshing and good for you too.

Ingredients (makes around 4 servings)

Nut Crust
– 200g raw pecans
– 25g shredded coconut
– 50g almond meal
– 60g maple syrup
– 35g coconut oil
– Pinch of sea salt

Vegan Cream Filling
– 170g raw cashews, soaked
– 150g coconut cream, solid part only
– Zest of 2 limes, finely grated
– 65g fresh lime juice
– 1 teaspoon matcha powder
– 40g maple syrup
– 1 teaspoon vanilla extract
– 15g coconut oil

Prepare Ahead
Soak the cashews in hot water for 2 hours.

Make the Crust
In a food processor, combine all crust ingredients and pulse until the mixture forms a fine crumb that sticks together when pressed. Line a 20 x 20cm pan with parchment paper and press the crust firmly and evenly into the bottom of the pan using your hands. Place the pan in the freezer while you prepare the filling.

Make the Cream Filling
Drain and rinse the soaked cashews. Add all filling ingredients to a high-speed blender and blend until completely smooth and creamy, scraping down the sides if needed.

Assemble
Pour the cream filling over the chilled crust and smooth the top with a spatula. Freeze for at least 3–4 hours, or until fully set.

Serve
Remove from the freezer 10 minutes before slicing. Cut into bars or squares and top with thinly sliced lime for decoration. Enjoy!
