My good friend, Kari works for me part-time as a personal assistant handling some little nuances of tipsy housewife. She was helping sort through my 175,000 picture photo album, and put them into organized albums. She found these pictures of this egg sandwich that I always make and I’ve never posted. She titled the album overlooked egg sandwich…… I argued with her who would want an egg sandwich recipe, and she says that people will. It does have a little bit of a twist to it. The sandwich was invented about 15 years ago when I had a raging hangover. I’m not hung over so much anymore, but the sandwich still tastes great. For the Chicken:

1 boneless skinless chicken breast

1 tbsp olive oil

1 tsp chili powder

1/2 tsp smoked paprika

1/2 tsp garlic powder

1/4 tsp cayenne pepper (optional)

Salt & pepper to taste

For the Salad Bowl:

2 cups romaine or mixed greens, chopped

1/2 avocado, sliced

1/2 avocado, diced

1/2 cup grape or cherry tomatoes, halved

2 boiled eggs, halved

1/4 red onion, thinly sliced

Olive oil + lemon juice (or vinaigrette) to serve

Spice & Sear the Chicken: Coat chicken with olive oil and all dry seasonings. Grill or pan-sear on medium-high for 5–6 minutes per side, or until cooked through. Let it rest, then slice it up.

Build That Bowl: Start with a leafy bed of greens, then layer on tomatoes, red onion, both sliced and diced avocado, and those golden boiled egg halves.

Top It Off: Lay your spicy sliced chicken right across the center. Drizzle with olive oil and a splash of lemon juice or your fave vinaigrette. Boom—done!
