Stuart Eggleshaw from Kirkby-in-Ashfield, Nottinghamshire regularly experienced embarrassment when he couldn’t fit through turnstiles as he followed his beloved Mansfield Town FC around the country, but it was a minor car crash that finally forced him to join Slimming World. It motivated him to lose 22st 9lbs and now he’s been crowned Slimming World Greatest Loser 2014. Read his amazing story here...
“Luckily the car crash incident wasn’t serious but the paramedics had to be called. It was then I realised that if the accident had been more serious and I’d been injured they probably would have found me very difficult to treat. I started asking myself, ‘would they have been able to get me out of the car?’, ‘would they have been able to lift me into the ambulance?’, ‘would they have needed specialist equipment?’.... I realised that any or all of those things could have prevented them from getting me to hospital in time and, ultimately, from saving my life. That was my wake-up call and I joined Slimming World soon afterwards.”
“I’ve struggled with my weight from a young age but I remember my size increasing rapidly around eight years ago. I was always described as ‘big-boned’, but when I hit 35 it seems like I was always having to buy bigger and bigger clothes. I tried going to the gym to lose weight but it never seemed to shift because I wasn’t changing my eating habits, and in the end I stopped going.

“I was apprehensive about walking into the group on that first night as I knew there’d probably be lots of women and not many men, but everyone was friendly and I got a warm welcome.
“I was amazed at the variety of foods that I could eat without having to restrict my portions and was delighted that I could still enjoy all my favourite meals just by making changes to the way I prepared and cooked them. For breakfast I enjoy cereal topped with berries and lunch is usually jacket potato and baked beans with mounds of salad. I snack on lots of fruit like bananas, mango, melon and pineapple. Currently my favourite meal is a Malaysian chicken curry from one of Slimming World’s recipe books

Eurovision party snacks

On April 13th 11 Slimming World superstars ran the famous 26.2 mile course around the capital. Between them they’ve lost more than 76st and they put their new-found fitness to the test to help change even more lives and raise money for SMILES’ charity partners, Cancer Research UK and the Marie Keating Foundation in Ireland.

Make your mother’s day
This Sunday is the perfect time to really pamper that special lady in your life – your mum. Whether it’s flowers, chocolates or a pampering treat, she’s bound to love your thoughtful gift.
If your mum or another family member would love to lose a few pounds – or more –another gift from the heart is to let them know about Slimming World.
Understandably, many of us worry about family members’ health and happiness but feel helpless to do anything. The last thing we want to do is make our loved ones feel self-conscious, embarrassed or hurt, and because being overweight is such a sensitive issue our words of compassion and care remain unsaid.
That difficult conversation can become much easier when you’re talking about your own weight loss. We know dozens of members who’ve asked a friend or family member to join Slimming World with them for additional support or they’ve gone along to support someone else. They’ve enjoyed Food Optimising, loved the extra support they’ve had from their loved one, and reached their target

Serves: 4 Prep. time: Cook time: Ready in about 45 minutes Total time: 30-60 Minutes Syns per serving: Green: 1Original: 1Extra Easy: 1

We can have our Pancakes and Lose weight

Mushroom Pancakes

8 large eggs
2 large handfuls of mixed fresh herbs (eg chervil, tarragon, chives and parsley),
finely chopped salt and freshly ground black pepper Lemon wedges, to serve

For the filling
Low calorie cooking spray
400g shiitake mushrooms,
thickly sliced 3 garlic cloves,
crushed 6 spring onions,
finely sliced 200g cherry tomatoes
60g extra-light soft cheese
For the sautéed spinach
1 onion, finely chopped
2 garlic cloves, finely chopped
½ tsp cumin seeds
300g spinach leaves
Method
Crack the eggs into a bowl. Add the herbs and 2 tbsp water, season and beat just enough to break up the eggs (take care not to overbeat them as this will spoil the texture).
Pour into a large measuring jug and set aside.
Heat a large frying pan sprayed with low calorie cooking spray and stir-fry the mushrooms, garlic and spring onions over a medium-high heat for 4-5 minutes, or until the mushrooms have softened and their liquid has evaporated.
Add the cherry tomatoes and cook for a further 1-2 minutes. Stir in the soft cheese, then set aside and keep warm.
Spray an 18cm frying pan with low calorie cooking spray and place over a high heat. When hot, pour in a quarter of the egg mixture. Rotate the pan to coat the base evenly and cook for 1-2 minutes, until the underside is golden and the top just setting.
Spoon a quarter of the filling onto the pancake and fold over. Keep to one side on a warmed plate while you make the other pancakes.
Heat a large frying pan sprayed with low calorie cooking spray and stir-fry the onion, garlic and cumin seeds over a medium heat for 1-2 minutes. Add the spinach and stir-fry for 3-4 minutes, or until it wilts. Season and serve with the pancakes and lemon wedges to squeeze over

New research published in the March edition of the British Journal of General Practice shows that after attending a Slimming World group for 12 months, our members see greater weight losses than members of other weight loss programmes. See the below diagram - the further to the left, the better!

Chips and Ketchup - Friday night Tea ? Just add Free Food of your choice to enjoy National Chip Week and lose weight.

Food Optimising is a chip-lovers dream - it allows you to eat unlimited potatoes - boiled, mashed, baked, roasted.
You can even enjoy unlimited chips - provided you follow our low fat way of cooking these great family favorites.

Ketchup
1 onion, finely chopped
2 garlic cloves, crushed
2 x 400g cans chopped tomatoes
2 tsp ground cinnamon
2 tsp each of celery salt, mustard powder and ground white pepper
4 tbsp sweetener
250ml red wine vinegar
1 tbsp Worcestershire sauce

Chips:
6 large baking potatoes, peeled and cut into thick chips
Frylight
Sea salt
method
Preheat your oven to 200°C/180°C Fan/Gas 6.
Put the ketchup ingredients in a pan and bring to the boil. Reduce the heat to low and cook gently for 40-45 minutes, stirring occasionally.
Meanwhile, boil the chips for 4-5 minutes. Drain well, return to the pan and cover. Leave to cool slightly, then shake the pan to roughen their edges. Line a baking tray with baking paper and put the chips on top in a single layer. Spray with low calorie cooking spray and bake for 15-20 minutes, or until golden.
Take the ketchup off the heat, season with sea salt and leave to cool. Blend in a food processor until smooth, then pour through a sieve into a bowl. Season the chips with sea salt and serve with the ketchup (leftover ketchup will keep in the fridge for up to 3 weeks in a sterilised, airtight jar).

TRICK or TREAT ?

This warming, lightly spiced soup marries the flavours of pumpkin with cumin to produce a soup that is delicously comforting. To ring the changes, replace the pumpkin with butternut squash. Serves: 4 Prep. time: 10 minutes Cook time: 35 minutes Total time: 30-60 Minutes Price Guide: Difficulty Rating: 2
Unlimited on all plans:
Fry Light 1 onion, peeled and finely chopped 1.2kg/2lb 11oz pumpkin, peeled, deseeded and roughly chopped 1 tbsp ground cumin salt and freshly ground black pepper 750ml/26fl oz vegetable stock 2 tbsp finely chopped coriander leaves To serve 4 tbsp fat-free natural yogurt roasted cumin seeds paprika
Method Spray non-stick saucepan with Fry Light and place over a medium heat. Add the chopped onion to the pan and stir-fry for 3-4 minutes until softened. Add the pumpkin and ground cumin and stir-fry for 2-3 minutes. Season well, add the stock and bring to the boil. Cover, lower the heat and simmer gently for 20-25 minutes until the pumpkin is tender. Allow the soup to cool slightly, place in a food processor and blend until smooth. Stir in the coriander and ladle the soup into warmed bowls. Garnish each bowl with a spoonful of yogurt and a sprinkle of roasted cumin seeds and paprika. - More ideas in Group
