Makes 16 thick bars for adults or 32 half bars for kids
No cooking required
Store in fridge for 1-2 weeks (but wont last that long as too scrummy)
2 cups oats
1/2 cup desiccated coconut
1.5 cups nuts (I cheat and get the deluxe salted nut mix at coles from self-serve, but you do you!)
½ cup sultanas
¼ cup linseeds
¼ cup cranberries
½ tsp salt
2/3 cup peanut butter
2/3 cup honey
1 x 200g bar of dark cooking chocolate
No cooking, no nasty chemicals they put into shop bought muesli bars and super dooper easy, my husband and daughter LOVE them!
Combine dry ingredients in a mixing bowl.
Pop peanut butter and honey in microwaveable dish and microwave on high for 1 minute.
Pour over dry ingredients and stir in
Transfer to baking paper lined dish (I like to use my lasagne dish or roasting tray its about the right size = approx. 32cm x 22cm). Place more baking paper over the top and press down hard (you could use another tray or your hands to press, you’re aiming for an even level finish and bars approx. 1.5-2cm thick).
Place in fridge for 2-3 hours.
Take out fridge and you should have a firm slab of yumminess
Melt dark chocolate in the microwave using 15 second bursts and stirring, pour over muesli bars and spread evenly
Refrigerate for 1-2hrs
Cut into 16 even large bars or 32 half sized bars for the littlies.
Store in the fridge in an airtight container (I pop baking paper between the layers so they don’t stick)!
