🌟FAJITA PIZZADILLA🌟 by is sooo easy to make, takes very little time, and is filled with flavor!

Serves: 2
Ingredients:
-3 flour tortillas
-5 tbsp pasta sauce (I used three cheese pasta sauce!)
-1/4 sweet onion, diced
-1/4 green bell pepper, diced
-1/4 red bell pepper, diced
-1 tbsp olive oil
-shredded Mexican blend cheese
-paprika
-chili red pepper flakes
-dry Italian seasoning mix

Instructions:
1. Heat up olive oil on skillet on medium heat. Add bell peppers and onions. Sauté for about 2 minutes. The vegetables should ideally not be too soft and still have a little crunch to them!
2. Heat up tortilla for approximately 30 minutes on a skillet. Lay heated tortilla on a plate. Add about 1-1.5 tbsp of pasta sauce to half of the tortilla. Be careful not to add too much!
3. Add about 1-2 tbsp of the vegetable mix on top of the sauce.
4. Sprinkle desired amount of crushed red pepper flakes, paprika, and Italian seasoning mix on top of the vegetables.
5. Top with a generous amount of shredded cheese!!
6. Fold tortilla over and place on skillet. Cook on medium heat, flipping until both sides become well toasted and light brown.
7. Serve warm and enjoy!!

𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:⁣⁣
1 cabbage ⁣⁣
3 medium sized portobello mushrooms, sliced julienne ⁣⁣
2 tbs of coconut oil ⁣⁣
3 cups of squash, raw and cubed⁣⁣
3 cups of wild rice, cooked ⁣⁣
2 tsp of onion powder ⁣⁣
1 tsp of garlic powder ⁣⁣
1 tbs of liquid aminos ⁣⁣
1/2 tsp of smoked paprika ⁣⁣
2 tbs of nutritional yeast (optional)⁣⁣
Salt to taste⁣⁣
⁣⁣
𝘚𝘢𝘶𝘤𝘦 ⁣⁣
2 tbs of coconut oil ⁣⁣
5 medium garlic cloves, minced⁣⁣
1 fresno pepper, chopped ⁣⁣
1/2 cup of water⁣⁣
2 tbs of tomato paste ⁣⁣
Juice of 1 lime⁣⁣
1/4 tsp of salt⁣⁣
1/2 tsp of sugar ⁣⁣
Pepper to taste ⁣⁣
⁣⁣
𝐈𝐧𝐬𝐭𝐫𝐮𝐜𝐭𝐢𝐨𝐧𝐬: ⁣⁣
1. Using a knife, removed the core on the bottom of the cabbage by making a cone-like incision. Toss the core when it is removed.⁣⁣
2. Boil the cabbage for about 10 minutes. Make sure you do not over cook the cabbage.⁣⁣
3. In a medium sized pan, on low-med heat, add mushrooms and coconut oil. Cook for 7 minutes.⁣⁣
4. Add squash and cook for 5 minutes. ⁣⁣
5. Add your cooked wild rice, onion powder, garlic powder, liquid aminos, smoked paprika and nutritional yeast. Cook for 10 minutes. Add salt to taste. ⁣⁣
6. Peel your cabbage and set leaves aside.⁣⁣
7. Place some of your filling in each cabbage leaf. Fold and roll neatly. Place the cabbage rolls in a large pan and set aside.⁣⁣
8. Sauce time!⁣⁣
9. Add coconut oil, pepper and garlic to small pan. Cook for 5 minutes and stir consistently to avoid bitter garlic. ⁣⁣
10. Add water, tomato paste and lime juice. Cook for another 5 minutes. ⁣⁣
11. Add salt and sugar. Stir well and cook for 10 minutes. ⁣⁣
12. Pour over your cabbage rolls in the plan! ⁣⁣
13. On medium-low heat, cook with your cabbage rolls for 10 minutes. ⁣⁣
14. Enjoy :) ⁣⁣

🌿PANCAKES with HERB CREAM CHEESE 🥞🌿by

For the pancakes:
300 ml of soy milk
100 gr whole-grain wheat flour
100 gr chickpea flour
30 gr coconut sugar
2 tsp apple cider vinegar
1 tsp baking soda
1 tsp salt

1) In a bowl combine flours, salt, and sugar.
2) Add milk and mix.
3) Place a tablespoon with 1 tsp of baking soda over the bowl, pour
vinegar over soda and let bubbles drip onto the batter. Mix in well.
4) Set your non-stick pan on medium-high heat, let warm
up. When it has reached the desired temperature, use the tablespoon to portion out the batter on the surface.
5) Cover with a lid, let cook for 1-2 minutes, depending on the size chosen. The surface will go bubbly because of a chemical reaction between soda and vinegar. Flip when there’s still a hint of moisture visible on the top of the pancake, and cook for 1-2 minutes more on the other side.
6) When they are ready, let them cool for another 5 minutes on a plate uncovered. The leftover moisture will evaporate and they will become even more fluffy.

HERB CREAM CHEESE

For cheese:
1cup of cashews
⅓ cup of pine nuts
1 ¼ cup of hot water
1 cup of plant milk
1 Tbsp of nutritional yeasts
1tsp of salt (more to taste)
Freshly ground black pepper (to taste)
1 Tbsp of lemon juice
A handful of fresh mixed herbs (dill, oregano, parsley)

For serving:
⅓ cup of roasted and crushed pine nuts
Mixed herbs/baby salad leaves

1) Pour the water over the nuts and let sit for 15 minutes.
2) Drain the nuts and put them in the blender, add the rest of ingredients for the cheese.
3) Blend for 2 minutes until the mixture is evenly green and smooth.
4) Put in a fridge for a couple of hours or enjoy straight away!
5) Serve on top of pancakes with crushed pine nuts and mixed herbs.

Getting the day started with this Breakfast of champions 🌱🌱

Recipe by

•2 blocks Medium-Firm Tofu, pressed*
•1 cup Cashews, soaked for at least 4 hours
•½ tsp Nutritional Yeast
•1 tsp Lemon Juice
•2 tsp Dijon Mustard
•1 tsp Distilled White Vinegar
•1 tbsp Fresh Chives, chopped
•1 ½ tsp Kala Namak (Black Salt)*
•¼ cup Filtered Water
•Black Pepper, to taste
•¼ tsp Turmeric (Optional, for color)
•tomato
•everything but the bagel seasoning

Instructions:
1️⃣Remove the Tofu from its package and press for 10-15 minutes. Then, the Tofu to a clean, dry towel and wrap it up while you prepare the “dressing.”
2️⃣To make the Mayo “dressing”, add all of the remaining ingredients, except for the Chives, to a high-speed blender and process until thick and creamy.
3️⃣Uncover the Tofu and use a knife to roughly chop it; I cut mine into thin strips, then on random diagonals to make a variety of chunks. Gently press another clean towel on top of the chopped Tofu to remove any excess moisture, then transfer to a bowl. Add in the Chives and dressing, and fold until well incorporated.
4️⃣Add more Black Salt and Pepper to taste, then serve as desired. 5️⃣Refrigerate leftovers for up to 7 days; this recipe will not freeze well.
