For the Custard
1 liter whole milk
150 g fine semolina
150 g granulated sugar
2 large eggs
2 egg yolks
60 g unsalted butter
2 teaspoons pure vanilla extract
Zest of 1 lemon
Pinch of fine sea salt
For the Pastry
12 sheets phyllo pastry, thawed
180 g unsalted butter, melted
For Serving
Powdered sugar
Ground cinnamon
Instructions
1. Prepare the Custard
Heat the milk in a large saucepan over medium heat until steaming.
Gradually whisk in the semolina.
Cook, whisking constantly, until thick and smooth.
In a separate bowl whisk together:
Sugar
Eggs
Egg yolks
Slowly temper the eggs with a little hot semolina mixture.
Return everything to the saucepan.
Cook gently for 2–3 minutes, stirring continuously.
Remove from the heat.
Stir in:
Butter
Vanilla
Lemon zest
Salt
Cover the surface directly with plastic wrap.
Allow the custard to cool for 20 minutes.
2. Assemble the Bougatsa
Preheat the oven to 180°C (350°F).
Grease a 23 × 33 cm (9 × 13-inch) baking dish.
Brush the dish lightly with melted butter.
Layer 6 sheets of phyllo into the dish, brushing each sheet generously with butter.
Spread the cooled custard evenly over the pastry.
Cover with the remaining 6 buttered phyllo sheets, brushing each layer generously.
Tuck the edges neatly into the pan.
Lightly score the top into serving portions.
Brush the surface with the remaining butter.
3. Bake
Bake for 40–45 minutes, until:
Deep golden brown
Crisp and flaky
Beautifully puffed
4. Rest
Allow the Bougatsa to rest for 10 minutes before slicing.
5. Serve

Instructions
1. Prepare the Honey Syrup
Combine honey, water, cinnamon stick, orange peel, and lemon juice in a saucepan.
Bring to a gentle simmer for 5 minutes.

2. Bake the Nut Sponge
Preheat oven to 180°C (350°F).

Instructions
1. Activate the Yeast
In a large bowl, mix the warm water, warm milk if using, sugar, and yeast.
Let it sit for 5 to 10 minutes, until foamy.
If the mixture does not foam, the yeast may be old or the liquid may have been too hot.
2. Make the Batter
Add the flour, salt, olive oil, and vanilla if using.
Mix with a spoon or whisk until you have a thick, sticky batter.
The batter should be softer than bread dough and thicker than pancake batter.
Do not worry if it looks sticky. Loukoumades dough is meant to be loose and elastic.
3. Let the Dough Rise
