Making a Delicious QUINOA Bowl----
Here's a simple recipe to get you started:
Ingredients:
1. 1 cup quinoa
2. 2 cups vegetable broth
3. 1 can of black beans, drained and rinsed
4. 1 red bell pepper, sliced
5. 1 avocado, sliced
6. 1/4 cup chopped cilantro
1 lime, juiced
7. Salt and pepper, to taste
Optional toppings: sliced jalapenos, shredded cheese, hot sauce
Instructions:
Rinse the quinoa in a fine-mesh strainer and transfer to a medium saucepan.
Add the vegetable broth and bring to a boil over high heat.
Reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the quinoa is tender and the liquid has been absorbed.
Fluff the quinoa with a fork and season with salt and pepper to taste.
In a separate bowl, mix together the black beans, sliced red bell pepper, chopped cilantro, and lime juice.
To assemble the bowls, divide the quinoa evenly between four bowls.

Ingredients:
1. 1 slice of whole-grain bread
2. 1/2 ripe avocado
3. 1 large egg
4. Salt and pepper to taste
Optional: cherry tomatoes and sliced green onions
Instructions:
Toast the bread to your desired level of crispiness.
While the bread is toasting, mash the avocado in a small bowl and season it with salt and pepper to taste.
In a non-stick skillet over medium heat, fry the egg to your desired level of doneness (sunny-side up, over-easy, etc.).
Spread the mashed avocado onto the toasted bread and top it with the fried egg.
If desired, garnish with halved cherry tomatoes and sliced green onions.
