🍽️ Keto Chocolate Cupcakes

πŸ“’ Ingredients
* 1 cup Almond Flour
* Β½ cup Erythritol
* 1/3 cup Cocoa Powder
* 1/3 cup Butter, melted
* 1 tbsp Gelatin Powder
* 3 Eggs, beatenβ €β €

πŸ§‘β€πŸ³ Preparation
1) Preheat oven to 350F. Brush a muffin pan with butter.
2) Stir together all ingredients in a bowl.
3) Pour batter into prepared pan and bake for 10-12 minutes or until a toothpick inserted in the center comes out clean.

🍽️ Keto Chicken Florentine
Servings: 1

πŸ“’ Ingredients
* 1 Chicken leg quarter
* 1 Tbsp Butter
* 1 Tbsp minced Shallots
* 1.5 cups Chicken Stock
* 2 Tbsp Heavy Cream
* 1 cup fresh Spinach
* Salt and Pepper, to taste

πŸ§‘β€πŸ³ Preparation
1) Melt butter in a pan then sprinkle shallots.
2) Add chicken on top of the shallots. Season with salt and pepper.
3) Add enough stock to barely cover the chicken. Bring to a simmer.
4) Cover and poach over low heat for 20-25 minutes.
5) Take chicken out of the pan and set aside.
6) Reduce pan juices to approximately a quarter of a cup.
7) Add spinach and heavy cream. Simmer over low heat until sauce is slightly thick.
8) Return chicken into the pan.
9) Serve hot.

🍽️ Keto Pancakes
Servings: 12

πŸ“’ Ingredients
* 4 Eggs
* 2 tbsp Butter
* 4oz Cream Cheese
* Sugar Free Syrup
* 1/2 tbsp Vanilla Extract
* 1/2 scoop of Whey Protein

πŸ§‘β€πŸ³ Preparation
1) Place eggs, cream cheese, butter and vanilla in a food processor or a blender, then blend until mixture is a liquid consistency.
2) Blend in Whey protein powder.
3) Spray a nonstick flat-bottom pan with coconut oil or non-stick spray and let the pan get warm over medium heat.
4) Pour about β…“ cup of batter into the pan and let it cook untouched for 2 minutes or until batter starts to bubble.
5) Flip the pancake and let it cook for 1 minute. Repeat steps 4 and 5 to finish all the batter.
6) On a serving plate, stack up all the pancakes, add a slice of butter if preferred, and drizzle with some sugar-free maple syrup!
