Chicken Biryani
Chicken biryani is a popular dish that originated in the Indian subcontinent and is now enjoyed globally. It typically consists of marinated chicken pieces cooked with long grain basmati rice and an array of aromatic spices like cardamom, cloves, cinnamon, and bay leaf. The marriage of these spices with the tender chicken and fragrant rice creates a dish that is rich in flavor and has a satisfying depth.
To prepare chicken biryani,
Here's a basic recipe you can follow:
Ingredients:
- 2 cups of basmati rice
- 500g chicken, cut into pieces
- 1 cup plain yogurt
- 2 onions, thinly sliced
- 2 tomatoes, chopped
- 2 tablespoons ginger-garlic paste
- 1 teaspoon cumin seeds
- 4-5 green cardamom pods
- 4-5 cloves
- 2-inch cinnamon stick
- 1 bay leaf
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- Fresh coriander leaves for garnishing
- Salt to taste
- Oil or ghee for cooking
Instructions:
1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain it.
2. In a bowl, marinate the chicken pieces with yogurt, ginger-garlic paste, turmeric powder, red chili powder, and salt. Let it marinate for at least 30 minutes.
3. In a large pot, heat some oil or ghee. Add cumin seeds, cardamom pods, cloves, cinnamon stick, and bay leaf. Saute until fragrant.
4. Add the sliced onions and saute until they turn golden brown.
5. Add the marinated chicken pieces and cook until they are slightly browned on all sides.
6. Add chopped tomatoes and garam masala. Cook until the tomatoes are soft and the mixture is well combined.
7. Layer the soaked rice over the chicken mixture in the pot. Add water so that the level is about 1 inch above the rice.
8. Bring the water to a boil, then reduce heat to low and cover the pot. Let it cook for about 15-20 minutes, or until the rice is cooked and the chicken is tender.
9. Once done, fluff the rice with a fork gently. Garnish with fresh coriander leaves.
10. Serve hot with raita or salad.
