Healthy Nigerian dinner idea
Grilled Chicken with Jollof Rice and Steamed Vegetables.
Start by marinating chicken pieces with a mixture of spices like paprika, garlic powder, onion powder, cayenne pepper, and a dash of lemon juice. Let the chicken marinate for at least 30 minutes to absorb the flavors. While the chicken is marinating, prepare the Jollof Rice by sauteing onions, peppers, and garlic in a pot until they soften. Add tomato paste, crushed tomatoes, and spices like thyme, curry powder, and bay leaves. Stir in washed and drained rice and add enough water or chicken broth to cook the rice. Cover the pot and let it simmer until the rice is cooked and the flavors are well blended.
Meanwhile, steam a variety of vegetables such as broccoli, carrots, and green beans until they are tender yet still crisp. Once the vegetables are done, remove them from the steamer and season with a little salt and pepper. Grill the marinated chicken until it's cooked through and has a nice exterior.
Serve the grilled chicken with a portion of Jollof Rice and steamed vegetables for a delicious and nutritious Nigerian dinner.

Efo Rio with Grilled Fish and boiled Plantain.
Efo Rio is a traditional Nigerian vegetable soup packed with nutrients and flavors. To make Efo Rio, saute chopped onions and peppers in a pot until they soften. Add blended tomatoes and cook until the mixture thickens. Stir in your choice of leafy greens such as spinach, kale, or ugu leaves, and season with spices like crayfish, stock cubes, and chili powder. Let the soup simmer until the greens are cooked to your desired tenderness. Meanwhile, prepare the grilled fish by marinating fish fillets with a mixture of spices like garlic powder, paprika, and lemon juice. Grill the fish until it's cooked through and has a slightly charred texture.
Lastly, boil plantain .
Serve the Efo Rio with a portion of grilled fish and boiled plantain for a well-balanced and flavorful Nigerian dinner.

Egusi soup and pounded yam ๐ฅฐ๐ฅฐ.
Egusi is very high in fat, no need for the over flowing red oil. Portion control is highly needed here. A Little pounded yam wonโt be bad.

Then add blended tomatoes and cook until the sauce thickens.
Next, add your choice of leafy greens such as spinach or kale, and cook until they wilt. Season the soup with spices like crayfish, bouillon powder, and chili pepper for added flavor. For the baked fish, season your fish fillets with herbs, spices, and a squeeze of lemon juice.
Place the fish in the oven and bake until it's tender and flaky.
Serve the Efo Riro with the baked fish on the side for a well-rounded and nutritious dinner option.

HEALTHY BREAKFAST RECIPE
Acha (fonio) pudding.
Acha pudding is rich in nutrients, a healthy diet and perfect food for weight loss. itโs rich in fiber, protein, and other essential amino acids.
Ingredients ;
Fonio (acha)
Milk (optional)
Sugar or desired sweetener( optional)
Instructions
1. First of all, rinse the acha thoroughly because of those thin sand particles, after that, place in a cooking pot.
2. Secondly, pour in 2 cups of water ๐ง and place it on the stove to cook on low heat, it requires continuous stirring until the water is full absorb into the grain as it becomes tender.
3. Thirdly, remove from stove, dish into a deep bowl ๐ฅฃ. At this point your pudding is ready but you can add any milk or sweetener of your Choice for a better taste ๐
