Baking Powder vs Baking Soda — Know the Difference Before You Spoil That Cake! 🍰🧁

Let’s talk about two powerful white powders that may look alike, but trust me, they are NOT the same — Baking Soda and Baking Powder. If you’ve ever mistaken one for the other, you probably already know how one small error can mess up an entire batch 😩.

So what’s the difference?

🔸 BAKING SODA (Sodium Bicarbonate)
Baking soda is a base. It needs an acid (like lemon juice, vinegar, buttermilk, yogurt, or even brown sugar) to activate. Once it meets that acid + heat, it releases carbon dioxide gas — and that’s what helps your batter rise.

It acts FAST. So once you mix it in, you need to bake it right away before the bubbles escape.

✳️ If there’s no acid in your recipe and you add baking soda anyhow? The result will be a bitter, metallic taste. Nobody wants to eat cake and be tasting "bitterness" at the back of their throat 😩😂

🔸 BAKING POWDER
Now this one already contains BOTH an acid and a base, plus a drying agent like cornstarch to keep it stable. So it doesn’t need any extra acidic ingredient to activate. Just moisture and heat, and boom — it gets to work.

Most baking powders are double-acting. That means they react twice:
👉 First when you mix the wet and dry ingredients
👉 Then again when heat is applied in the oven.

That gives your batter more time and a better, more consistent rise.
