Creamy roast carrot hummus, my new obsession ✨ Here’s the recipe for you guys, perfect for a midweek snack or for your lunchboxes πŸ’₯
4 medium carrots - roughly chopped, 2x 400g cans chickpeas, drained, 3 tablespoons olive, 2 tablespoons tahini, juice of 1 lemon, 2 garlic cloves, 1 teaspoon ground cumin, splash of water, salt β€ͺ Place the carrots onto a baking tray with a drizzle of olive oil and salt. Roast for 40 minutes until soft, adding the garlic cloves for the last 10 minutes. Once soft, remove and leave to cool. Once cool, place all of the ingredients into a food processor and blend until smooth and creamy, adding a splash of water or more olive oil if needed. ‬ β€ͺYou can store this hummus in an airtight container in the fridge for about five days.

I have been wanting to make these for a while πŸ˜‰ made with almond meal, roasted almonds, honey, vanilla and water. The texture is different to using nuts and dates like I usually do...more like a dough ball 😜
