Bel and Lubi’s Soup

Free Recipe (open source)
Ingredients:
2 cups coconut milk
6 cups water
2 cups squash, diced
2 cups sweet potato, diced
2 cups string beans, chopped
2 cups eggplant, diced
2 cups spinach, chopped
2 cups morning glory (kangkong), chopped
2 cups cabbage, shredded
4 cups pineapple, chopped
2 cups mung beans, cooked
2 medium onions, chopped
2-inch piece of ginger, sliced
1-5 teaspoons red curry paste (optional)
Salt and black pepper, to taste
Or season any way you like
Procedure:
Wash all the vegetables thoroughly.
In a large pot, bring 6 cups of water to a boil. Add the ginger and onions, and simmer for 3 minutes.
Add the sweet potato, squash, string beans, and eggplant. Simmer for 5 minutes until they start to soften.
Stir in the coconut milk, cabbage, morning glory, spinach, and pineapple. Cook for another 5-7 minutes.
Add the cooked mung beans, red curry paste (if using), salt, and black pepper to taste. Simmer until all vegetables are tender.
Adjust seasoning if necessary. Serve hot and enjoy!
Any vegetables or beans can be added to this “open source” recipe. Please experiment see if you can make it better or remember variety good.

The spice is nice, but if you do not like it. Make it plain. That is all good.
The healthy fat of the coconut, the sweetness of the pineapple, and spice of the Thai Red Curry paste are what flavors the healthy vegetables and mung beans. This soup is medicine! It cures or prevent numerous chronic diseases. Including but not limited to: heart attack, stroke, breast cancer, colon cancer, other cancers, diabetes, gout, arthritis, mental health issues like bipolar, depression, ADHD. He/she that neglects their diet wastes the time of their doctor. This soup was inspired by the documentary “Forks over Knives” which advocates a plant based diet where meat is used for flavor. “Forks over Knives” is backed by The China Study. The rules are simple: eat mostly fruits and vegetables. Eat about 50-100 grams of meat per day on average depending upon your weight. Eat whole foods. Eat rice in moderation and try eating whole foods like sweet potato instead of so much rice.
This soup is very cheap and will help people save money to climb out of poverty. Roughly, 85% of the world’s healthcare costs are from chronic diseases caused by unhealthy diet. People need to eat a balance diet..It’s not complicated. Our great grandmothers knew how to feed us. Meat was relatively more expensive in the past and so it was used in small amounts in combination with vegetables.
You can add some meat to Bel and Lubi’s soup, but please be mindful of your consumption meat. The world's forest have been destroyed to grow corn and soy to feed sick, miserable, and tortured animals which humans are eating way too much meat.
This gluttony needs to stop! It is getting worse every year. As a science teacher and environmentalist, I have been losing this war. However, there is hope! It is not too late, and a movement is growing all over the world. People are uniting together to eat correctly, and to be conscious of the effects of their consumption.
People can be sheep.Thankfully, great leaders are arising constantly. We don’t have to be perfect. We just have to make progress. One baby step at time. Slowly if needed, but always with a determination that our God, higher power, or Mother Earth if you prefer wants us to be happy. And happiness is byproduct of doing the right thing. It is not pleasure seeking. Its loving your neighbor, and offering them good food. Join us on this narrow path that leads to a world with less suffering and more harmony. Where in our process of learning from coco life in pantukan. We will make the best health food from coconuts in the world or very close. Our aim is to pay the coconut farmers fairly and protect our environment at the same time. Our faith to God is at the center we do. We want to teach people how to fish as the Bible says. Lubi has not treated his body as a temple but he is trying to change. So far, he lost 42kg. Eventually all our recipes will open sourced or made freely available. Please copy and improve them. Make something healthy like them but people need variety. Any message you send, we will do our best to respond thoroughly and provide reliable sources. Lubi is a disabled science who taught nutrition. He has studied for decades to be able to be a leader, but he is glad to be follower if you have knowledge or wisdom to teach.
