Cassava Cake Special with Langka and Macapuno (Jackfruit and Coconut Strings)
Prep time: 20 minutes
Cooking time: 1 hour
Yields: 1 large round baking dish 3½ inch tall x 9 inch diameter
2 packages frozen cassava, completely thawed
1 small can condensed milk plus ½ cup for toppings
1 can coconut milk (14.5 oz)
1 tbsp vanilla extract
2 cups Macapuno (coconut strings)
1 can Jackfruit in Sugar Syrup, drained, processed in a food processor or finely chopped and then divided into 2.
3 eggs
pinch of salt
1 stick (8 tbsp) melted butter
Brush your baking dish with melted butter and set aside.
Set oven rack to the center of the oven and pre-heat oven to 350 F.
Meanwhile –
In a large bowl or container, combine the following – Cassava, 1 can condensed milk, coconut milk, vanilla, salt, 1 cup macapuno, half of the jackfruit, eggs, and butter.
Place in the baking dish and bake for 60 minutes. If you are using a short and wide baking dish, the baking time should be less.
While the cassava is baking, prepare the toppings.
In a mixing bowl, combine ½ cup condensed milk, 1 cup macapuno, ½ jack fruit. Stir well.
Remove cassava cake from the oven after it is baked. Adjust oven function to broil –
Spread toppings on top of the cake. Broil for 5 minutes until top is caramelized and slightly burnt.
Cool down. Slice and serve.

Ingredients:
1/2 cup pineapple
1/2 banana
1/2 mango
1 cup almond milk
1 tbsp chia seeds
Wednesday – Green Cleanser Smoothie (Detox & Hydrating)
Ingredients:
1 cup spinach
1/2 green apple
1/2 avocado
1 stalk celery
1 cup water
Squeeze of lime
Thursday – Banana Oat Smoothie (Filling & Nourishing)
Ingredients:
1 banana
2 tbsp rolled oats
1 cup oat milk
1/2 tsp cinnamon
1 tbsp peanut butter (optional)
Friday – Carrot Papaya Smoothie (Great for Digestion)
Ingredients:
1/2 cup papaya
1 carrot (peeled and chopped)
1 tbsp chia seeds (soaked)
1 cup water or coconut water
Optional: small piece of ginger
Saturday – Chocolate Protein Smoothie (Indulgent & Nutritious)
Ingredients:
1 banana
1 tbsp cocoa powder
1 scoop chocolate protein powder
1 cup milk (any kind)
Ice cubes
Sunday – Peach Yogurt Smoothie (Smooth & Comforting)
Ingredients:
1 peach (fresh or frozen)
1/2 banana
1/2 cup plain or Greek yogurt
1/2 cup milk or water
A pinch of cinnamon

Delicious Asian Stir-Fried Noodle Recipes
1. Yakisoba (Japanese Stir-Fried Noodles)
Ingredients:
2 packs yakisoba noodles (fresh or pre-steamed)
100g pork belly or thinly sliced pork shoulder
1 cup green cabbage, roughly chopped
1 small carrot, julienned
½ onion, thinly sliced
1 tbsp oil (vegetable or sesame)
Yakisoba Sauce:
2 tbsp Worcestershire sauce
1 tbsp ketchup
1 tbsp soy sauce
½ tbsp oyster sauce
1 tsp sugar
Instructions:
1. Slice meat and vegetables. Mix sauce ingredients in a bowl.
2. Heat oil in a pan and cook the pork until browned. Remove and set aside.
3. Stir-fry onions and carrots, then add cabbage.
4. Loosen noodles under warm water, drain, and add to pan.
5. Pour in sauce and toss well until evenly coated.
6. Serve with optional toppings like pickled ginger, mayo, or aonori.
2. Shrimp Pad Thai
Pad Thai Sauce:
3 tbsp fish sauce
1 tbsp oyster sauce
1½ tbsp tamarind paste
1½ tbsp brown sugar
1 tbsp soy sauce
Stir-Fry:
6 oz flat rice noodles (soaked 20–30 mins)
2 tbsp vegetable oil
2 cloves garlic, minced
10 shrimp, peeled and deveined
2 eggs, lightly beaten
1 cup bean sprouts
2 green onions, sliced
¼ cup crushed peanuts
Optional Garnishes:
Lime wedges, extra peanuts, chili flakes, cilantro
Instructions:
1. Mix sauce ingredients in a bowl.
2. Soak noodles and drain.
3. Cook shrimp in 1 tbsp oil, then set aside.
4. Sauté garlic, then scramble eggs in the same pan.
5. Add noodles and sauce, stir until caramelized.
6. Return shrimp to pan with bean sprouts and onions. Toss and serve topped with peanuts and garnishes.
3. Shrimp Chow Mein
Ingredients:
3 tbsp cooking oil
1 lb raw shrimp, peeled and deveined
1 small carrot, thinly sliced
8 oz green cabbage, thinly sliced
2 cloves garlic, minced
½ tsp minced ginger
15 oz egg noodles
2 stalks green onion, sliced
Sauce:
2 tbsp oyster sauce
1 tbsp soy sauce
2 tsp sesame oil
1 tsp brown sugar
2 tbsp water
Pinch of black pepper
Instructions:
1. Season shrimp with salt and pepper. Mix sauce in a small bowl.
2. Heat 1 tbsp oil, sear shrimp for 30 seconds to 1 minute per side. Remove from pan.
3. In same pan, heat remaining oil. Sauté garlic and ginger.
4. Add cabbage and carrots, cook 1 minute.
5. Add noodles and sauce, stir until well coated.
6. Add green onions and shrimp, cook 1 minute. Serve warm.
4. Japchae (Korean Glass Noodles)
Beef Marinade:
½ lb beef, thinly sliced
2 tsp soy sauce
2 tsp sugar
2 tsp garlic, minced
½ tsp black pepper
Sauce:
¼ cup soy sauce
2 tsp sugar
½ tsp garlic, minced
1½ tbsp sesame oil
½ tsp salt
½ tsp black pepper
Noodles & Veg:
250g sweet potato noodles
4 tbsp vegetable oil
2 eggs, lightly beaten
1 tsp salt (divided)
½ yellow onion, sliced
3 green onions, white & green parts separated
200g shiitake mushrooms, sliced
1 carrot, julienned
1 red bell pepper, sliced
4½ cups baby spinach
2 tbsp sesame seeds
Instructions:
1. Marinate beef. Mix sauce in a large bowl.
2. Cook noodles per instructions. Drain and add to sauce bowl without mixing.
3. Make a thin omelet, cool, and slice into ribbons.
4. Stir-fry onion, green onion whites, mushrooms with ½ tsp salt. Add to noodles.
5. Stir-fry carrots, peppers, spinach, green onion greens with ½ tsp salt. Add to bowl.
6. Stir-fry beef, add to bowl. Add sliced omelet and most sesame seeds.
7. Toss everything together until evenly mixed. Serve warm, topped with remaining sesame seeds.

Creamy Egg Pie Recipe 🤤⭐
✔️Dough 2 cups all purpose flour (270g)
1 tbsp sugar (13g)
1/4 tsp salt (1g)
1/2 cup cold butter (unsalted) (115g)
5 tbsp cold water (75ml)
✔️Custard Filling
1 whole egg (large) (yolk & white separated)
3 whole eggs (large)
1 tsp vanilla extract (5ml)
1 can condensed milk (300ml)
1 can evaporated milk (370ml)
1 cup all purpose cream (240g) [or heavy cream / whipping cream instead]
Procedure:
1. In a mixing bowl, combine the flour, sugar, salt and cold butter (cut into dice/cubes). Mix together by hand until it’s crumbly. Gradually add in the cold water. Knead until just combined and dough forms. Shape the dough into a ball, wrap in plastic then refrigerate for at least 30 mins.
2. On a floured counter, roll out the refrigerated dough that will fit into a 9 or 10 inch round baking pan. Place the rolled out dough and press evenly into the bottom and sides of the baking pan. Refrigerate while preparing the filling.
3. In a mixing bowl, combine the egg yolk, whole eggs, vanilla, cream, evaporated and condensed milk. Stir until just smooth. Strain the mixture twice into another bowl for smoother custard.
4. Whip / whisk the egg white until soft peaks form. Fold into the custard mixture until just combined. Pour mixture into the prepared pie crust.
5. Bake in a pre-heated oven @ 180°C for 60 to 80 mins. (❗️Baking time may vary on the depth of the pie / pan and on the type of oven, so alter accordingly). Check doneness when pie has browned top, edges are firm & set while the center still has a slight jiggle.
6. Let the pie cool completely. Refrigerate for at least 4 hours or until overnight before serving.
