just by meal prepping my work lunches, I’m saving over $2000 a year 🤯 (and this is money better spent elsewhere IMO!) 💰 recipe below 👇🏼

ingredients
1 medium sized brown onion, chopped
2 cloves of garlic, chopped
500g pork mince
2 tbsp soy sauce
2 tsp fish sauce
1.5 tbsp brown sugar
1 tsp lao gan ma chilli crisp
1 sprig of spring onion, sliced
1 sprig of coriander

to serve
1 head of bok choy, ends chopped and blanched
1 packed of coconut rice, cooked

method
1. in a large saucepan, sauté the onion and garlic until golden brown.
2. add the pork mince and stir occasionally until browned. add the chilli crisp, soy sauce, fish sauce and brown sugar, stirring until well-combined.
3. whilst the mince is cooking, boil a separate, small pot of water. once this is at a rolling boil, add a dash of sesame oil and add the bok choy in, ensuring it is submerged in the boiling water.
4. cook this for 2 minutes and transfer just the bok choy to a bowl filled with ice water to stop the cooking process.
5. serve the pork mince with rice and the cooked (and drained) bok choy. enjoy!
