Albuquerque, meet Maakouda πŸ”₯πŸ”₯😁😁

One of Morocco's most loved street foods β€” crispy on the outside, soft and flavorful on the inside πŸ˜‹πŸ˜‹

Maakouda are Moroccan potato cakes, and one of our favorite ways to eat them is exactly like this: stuffed into bread with tomato sauce and Harissa 🌢️

(We added cheese & onions) 🀭🀀

Simple. Messy. Delicious. And very Moroccan πŸ‡²πŸ‡¦β™₯️

We're so excited to bring a little piece of Moroccan street food to Albuquerque and Rio Rancho VERY SOON πŸ”œ

WE BROUGHT IT HOME! πŸ‡²πŸ‡¦β™₯️

Today we officially picked up our customized food trailer and brought it home! πŸ₯Ή Seeing the finished trailer, hooking it up to our truck, and actually driving away with it made everything suddenly feel VERY real! We are beyond excited πŸ€—

Months of planning, saving, recipe testing, paperwork, decisions, nerves and excitement are starting to come together. Now the real work begins 😍

We’ll be spending the next few weeks painting our food trailer, going through all the inspections, finalizing the menu and preparing for our ULTIMATE GRAND OPENING πŸ‡²πŸ‡¦

Oh...and we also need to add "learn how to back up a food trailer" to that list because getting this thing into our driveway took us almost TWO HOURS, YES, TWO HOURS πŸ˜‚πŸ˜­

We are getting closer!

✨️ Shall we go on a tour of Morocco together? ✨️

Morocco is a country with deeply vibrant colors and a very long history. Going back further than the Roman Empire! It's gone by various names but modern Morocco is still home to ancient archeological sites and generations of traditions. A living time capsule of what came before πŸ’•.

Attached to this post is a glimpse of the Chellah Castle, an old archeological site that has been home to civilizations for over 2,000 years, the Atlantic Ocean in Rabat, the traditional medina of Rabat known as Old Town, as well as some Moroccan sweets that we enjoyed a lot πŸ˜‹.
