FOODIE FRIDAY . . . .
“For me, the answer to eating healthy is found in simplicity. That is why I love the ease of grabbing a Fastify after my walk in the morning and then having an uncomplicated salad for lunch.
I thought I would share my favorite go-to salad with you. This salad includes water-rich ingredients to help you stay hydrated and make digestion easy!”

Ingredients:
A mix of light and dark green lettuce (I use romaine and spinach)
1 cup cucumbers sliced lengthwise and chopped
¼ cup sauerkraut (more if you like)
A handful of chopped tomatoes
½ avocado
A sprinkle of feta cheese

Dressing:
2 tablespoons of olive oil
The juice of half a lemon
1 tablespoon Dijon mustard
Sea Salt to taste
A touch of water to create more volume
