I just saw Dr. Deepak Chopra speak recently and a risk factor for dementia that I found fascinating was education level. He said that if everyone in the world got educated up to the age of 15 years old, dementia would decrease by 8% worldwide! This is telling in so many ways and one interesting aspect is that "lifestyle diseases" take decades to show their symptoms BUT they are progressing unbeknownst to us.

So there are some (me) who believe that no holiday gathering is complete without eggnog. So, here is a nice healthy holidays recipe for homemade eggnog for those of you that believe in the power of holiday eggnog!

Primal Eggnog
(from Mark’s Daily Apple)

Homemade is the best here! You can control the sugar and other ingredients and have it be much more “custard-y”! Makes 4-6 servings.

4 beaten egg yolks
3 cups of organic coconut milk, almond milk or whole cream
1 teaspoon maple syrup or sugar (or you can skip and see)
1 teaspoon vanilla extract
ground nutmeg and cinnamon to taste

Mix egg yolks, 2 cups of milk and the maple syrup or sugar. Stir gently but constantly over medium-low heat until the mixture thickens enough to cling to and coat the back of a spoon, about five to ten minutes. Be patient with this process – if you turn the heat up too high or don’t stir, the egg yolks might turn into scrambled eggs.

Remove from heat and set the pot in a larger bowl filled with ice water (careful, so no water overflows into the eggnog!) and stir for 2-3 minutes then add the last cup of milk/cream and the vanilla. This is where you might add a bit of rum or other alcohol if you'd like.

Let the mixture cool down to room temperature then chill for a while longer in the fridge. The longer you let eggnog chill, the thicker and more custard-like it will become. Before serving, generously dust with cinnamon and nutmeg. If you can, try whole nutmeg and grate it yourself (a microplane zester works great here).

[12/13/17]   Okay. Here is the next healthy holidays recipe I'd like to share with you:

Coconut Macadamia Bark
(from Mark Sisson)

For a little something sweet but still toward the healthy side with the healthy fats!

1 cup melted coconut oil
1/3 cup toasted coconut flakes
2/3 cup roughly chopped macadamia nuts
(feel free to add other goodies in like dark chocolate or lightly sweetened cacao chips or a little dried fruit)

Mix together oil, coconut flakes and nuts. Line a pan or plate with parchment paper. Pour the oil mixture onto the parchment paper. Freeze at least 30 minutes. Break apart into pieces of bark. Store in the freezer.

[12/12/17]   As promised in yesterday's post, here is my first healthy recipe idea that can be taken to holiday gatherings fairly easily.

COLORFUL WINTER SALAD WITH TAHINI DRESSING
(from Elana Amsterdam)

1 small head purple cabbage, grated (about 3 cups)
1 small head romaine lettuce, grated (about 1 cup)
2 medium carrots, julienned (about 1 cup)
¼ cup Tahini Dressing*

Combine ingredients in bowl.
Toss with dressing and serve.
(serves 4)

*TAHINI DRESSING RECIPE:
➢ ½ cup roasted tahini
➢ ½ cup water
➢ ¼ cup lemon juice
➢ 2 TBSP olive oil
➢ 1 tsp sea salt
(blend ingredients until smooth)
Store in fridge for up to three days. Can be used as dressing and /or dip.

Enjoy and have a wonderful and healthy holiday season!

HAHAHA! We are on the back stretch of this holiday season (any track runners here? I ran the 400m and 800m). All this means is we still have PLENTY of time to STAY HEALTHY and NOT GAIN WEIGHT during this season. Here are a few tips I've put together for us to keep in mind as we go to our parties and gatherings:

HAPPY HEALTHY HOLIDAYS 2017!

A few healthy tips while navigating through the holidays:

1. Be realistic: try to maintain your current weight- not lose weight during the holidays.
2. Self Care and Self Pacing are key
3. Plan time for movement: maintain current exercise or try and add a couple of 10-15 minute walks a day (i.e. park out in Big Truck land at the mall)
4. Keep hydrated: and add lemon to your water

To enjoy holiday gatherings while trying to avoid the weight gain, try to:

1. Eat a healthy breakfast that day
2. Have a healthy snack before you go
3. Take your own healthy dish to the party (ideas are coming in new posts this week)
4. Grab a sparkling water when you arrive (add that lemon wedge!) and wait 30 minutes before eating
5. Be a “food snob” ->and check in on your hunger ->slow down & sit down to eat
6. Limit the variety on your plate to TWO items at a time
7. Eat until satisfied, not stuffed (notice your fullness and then step away from the buffet)

Keep your focus on the traditions of the season and enjoy your family and friends to the fullest! Stay aware of your mindset and shift it -> this is the secret sauce to lasting and sustainable weight loss and any overall change AND, as a Transformational Health Coach what I help my clients do all the time.

Today, as follow up to my recipe of the week for my morning drink, I wanted to share with you an article about cinnamon. There are big differences between Ceylon and cassia cinnamons. This article goes into good detail:

Some highlights:
-cassia is a bigger seller but Ceylon is known as "true cinnamon".
-Ceylon has many benefits including:
-sweeter, more delicate flavor
-blood sugar regulation
-may help in weight loss
-help circulation
And several other benefits described in the article.

If you're going to use cinnamon regularly, it's advised you look for Ceylon. It will be labeled as such and if it's not you can be pretty sure you're buying cassia.

Recipe of the Week:
Skinny Jeans On-The-Go Omelet Muffins

We all want that healthy start to the day. Does this sound familiar: trying to get everyone out the door on a work/school day and have them fed with a hearty breakfast but you have no time to do that? Well here is an idea that we use here at our home to solve that problem. We cook these (there are two of us) on the Sunday and then eat them for a few days into the workweek. Remember: cook once, eat twice (or maybe even thrice!) If you have a bigger crew – double it up!

8 Pasture Raised Eggs
4-8 Ounces of Diced Meat (if desired)
Diced or Grated Organic Veggies to Your Liking
(i.e. zucchini, garlic, cilantro, onions, etc.)
¼ teaspoon good salt
1/8 teaspoon ground black pepper
Any other spice to taste
½ Cup Organic Whole Fat Coconut Milk
1 Tablespoon Coconut Flour

Directions:

1. Preheat Oven to 350 Fahrenheit (175 C)
2. Beat Eggs together in a large bowl (use a spouted bowl if you have one). Mix coconut milk and flour in. Add spices and veggies into the mixture.
3. Pour egg mixture into prepared paper muffin cups in a muffin pan.
(Tip: I put the chopped meat into each muffin at this point so that I can better evenly distribute.)
4. Bake in the preheated oven until muffins are set in the middle – about 22-25 minutes.
5. Store in fridge and heat up each morning – and surprisingly, these tasty muffins are good cold too.

Makes 10-12 muffins

This recipe covers many bases! You’ve got fast, you’ve got easy. You’ve got all the macronutrients covered – healthy fats, proteins and carbs. You’ve got creativity - add the spices and veggies and meats that are right for you.

My Health Coach Tip: these are easy to carry to work/school and that’s great! Always try and eat slowly however. Take the time to eat with all your senses and really savor and enjoy your food. Chew your food thoroughly. Your body and brain will thank you for it!
