Yesterday was a lazy kind of day, mainly because I did way too much on Sunday.

My breakfast yesterday was shredded potatoes, half a red pepper, and onion. I topped it with 2 over easy eggs, and 1 tbsp of salsa.

My lunch was pizza. If you are doing strict whole30, this is not for you. Whole30 you are supposed to eat things that aren't your go to comfort foods. I wanted to make it because I have had pizza one time since December 28th, and I needed some. I even had it for dinner on Sunday.

Pizza recipe:
1.5 cups almond flour
2 eggs
Basil, oregano, garlic to taste
1 tsp baking powder (I generally do not use)
2-4 tbsp water
1 tbsp olive oil.

Mix, and flatten in a pan with olive oil so it doesn't stick. Cook at 375° for 7 minutes.
Take out, and put on your toppings. My toppings of choice are compliant sausage, onions, mushrooms, and peppers. Bake another 10 minutes, and enjoy!!

Dinner was seasoned baked chicken, green beans. My boys had mac and cheese as well.

Breakfast today is a smoothie. 1 banana, 4 strawberries, 1 cup of cashew milk, ice to your liking.

I will be having my leftover pizza for lunch. And for dinner it is a date night to the local steak house, my dad is in town and is taking my son for the night.

Good afternoon!!!

How is the weather where you are??

It is sunny and 72 degrees where I am. Today, my boyfriend and I will be doing yard work, and then the boys are having pizza, and I'm not sure what I will have yet.

I wanted to share a wonderful recipe with you all though, especially because one of the vegetables is in season, NOW!

Recipe:
*Compliant sausage. This is sometimes hard to find, but I have found it in every store I've been in. I have found some in Walmart, Jewel, and Aldi.
*peppers. I use the mini sweet peppers.
*onions. I always use Vidalia.
*Asparagus. This is in season, so it is cheaper now.

I cut them all up, add them to a pan with olive oil, and cook until done. I have added whole30 creamy balsamic dressing. Last night I just added salt and pepper to taste.

Even my Dad loved it, and he generally refuses to eat anything that is whole30.

I started my day off with 2 over easy eggs, on top of leftover burger patties. I also had some cucumber slices.

My dad is in town, so we will be spending the day out at my parents lake house. It is so peaceful and serine.

So since March 5th, my last post, my health declined, badly. I was in and out of the ER, 6 times to be exact. I have been to the Dr. 8 times since then, blood draws every time. It was horrible. I didn't have the energy to eat whole30, so for 4 weeks I didn't.

It turns out, my eating had a huge impact on my PoTS (Postural Orthostatic Tachycardia Syndrome) and because of how sick I was, I was inactive. I was bedridden for 4 weeks. My mom had to travel 10 hours so she could be by my side, and do all the mom duties that I couldn't do. She also advocated for me at the Dr.'s and I was finally put on medication.

Fast forward 2 weeks, to today, and I am finally able to function. I still cannot work, but I was finally able to shower without having a tachycardia episode. I was able to cook dinner so far every night this week. I still have a ways to go, I am not able to stand for long periods of time, I have to use a shower chair (thank you to one of my best friends, she ordered it and got it shipped to me). I am dizzy 24/7 and feel better when I am laying down. I live in my leggings, and tanks. Thank you Zyia!!!

I am on day 14 of eating back on whole30, and I have some energy back. I even did workouts while laying down the other day.

I want to apologize for abandoning this group, I should have used it as a support system. But I could barely keep going on a day to day, so I didn't feel like I could help you all achieve your goals.

I'm back! I'm here to stay. I also wish, at the end of this, that I can become a whole30 coach. It's expensive, and I'm indecisive 🙃

Good Morning!!!

It is Monday, let's tackle this day, and make it a great start to the week.

This morning I had leftover roasted potatoes, 2 over easy eggs, with 1 tbsp of salsa, and 1 banana.

My lunch will be left over spaghetti, without noodles, and a salad with ranch from Primal Kitchen.

What's for dinner tonight?

I am having a Pork Tenderloin cut up, with red potatoes, red peppers, red onions, green onions, garlic, parsley, salt, and pepper. (Picture below)

Whole30 can be very simple, or it can be very hard, it is up to you. Some of my meals take a long time to cook, but then I know to make those on the weekends when I have plenty of time, and help from my wonderful boyfriend.

I want to have a group of us who are interested do a March Whole30. I will be always eating this way now, especially because I realized the foods I was eating (the one's you choose to give up on whole30) made me feel horrible.

I have PoTS which effects my central nervous system, which really effects so much in my body; heart rate, blood pressure, digestion, getting dehydrated quickly, brain fog, fatigue, light headed, feeling faint, and a few more.

All because of eating whole30 (from December 28th until February 2nd, then back on from February 3rd and I am still going strong) I am almost symptom free. I still have my bad days, but I realized it is from under eating, and not getting enough water in me. From December 28th till now, I have had 3 PoTS episodes. Prior to Whole30, I struggled every single day with PoTS, and was spiraling into a depression from feeling useless.

If you have any questions about my experience please ask, or even message me! This is something I cannot share enough, I truly believe the way we eat is how we will feel.

Hello!!!

I took over a month off from social media. It was for my mental health and it was amazing. I decided to come back to Facebook for this page. I finished my month strong, and actually went to day 34 until I tried to have bread. So I had a bun with a burger, and ended up being flu like sick for 3 days. I have gone back to eating whole30 because it works best for my health.
