Makes 4 fritters:
• 1 firm-ripe avocado, half mashed and half diced
• 1 egg
• ⅓ cup quick oats
• 1 green onion, finely chopped
• ¼ tsp garlic powder
• Salt and black pepper, to taste
• 1–2 tsp olive oil, for the skillet

Mix the mashed avocado, egg, oats, green onion, garlic powder, salt, and pepper. Fold in the diced avocado and let the mixture rest for 5 minutes. Shape into 4 small fritters. Cook in a lightly oiled skillet over medium-low heat for 3–4 minutes per side, until golden and set. If the mixture feels too loose to shape, add 1 tablespoon of oats.

Ingredients:
• 2 cups chopped cooked chicken breast
• 1 cucumber, diced
• ¼ red onion, finely diced
• ½ cup plain Greek yogurt
• 1–2 tsp everything bagel seasoning
• 1 tsp lemon juice
• 1 tsp Dijon mustard

Mix the Greek yogurt, lemon juice, Dijon, and everything bagel seasoning. Add the chicken and coat it in the dressing. Fold in the cucumber and red onion, then finish with a little more seasoning.

Ingredients:

1/2 cup cottage cheese

2 eggs

1/2 cup rolled oats

Optional: pinch of pumpkin pie spice

For topping:

maple syrup

chopped pecans

Greek yogurt

How to make it:
Blend the cottage cheese, eggs, pumpkin purée, oats, baking powder, vanilla, and cinnamon until smooth.

Pour the batter into small pancakes on a lightly greased skillet. Cook until the edges are set, flip, and cook until both sides are golden.

Makes 4 patties:

Roughly mash the edamame. Mix in the broccoli, egg, oats, and seasonings, then shape into 4 patties. Cook in a lightly oiled skillet over medium heat for about 4–5 minutes per side, until golden and cooked through. If the mixture feels too wet to shape, add another spoonful of oats.

For the dip, stir minced garlic into plain Greek yogurt. Add a squeeze of lemon if you like.

• 1/2 cup rolled oats
• 2 tbsp vanilla protein powder
• 1/2 tsp pumpkin pie spice
• 1/2 tsp baking powder
• Small pinch of salt

How to make it:
Mix the pumpkin puree, egg, Greek yogurt, milk, maple syrup, and vanilla until smooth.

Add the rolled oats, vanilla protein powder, pumpkin pie spice, baking powder, and salt. Mix until fully combined.

Pour the thick pumpkin batter into a small microwave-safe ramekin.

They’re made with oats, banana, Greek yogurt, cocoa, and chocolate chips, so you get that brownie-style texture without turning breakfast into a full baking project.

Microwave Chocolate Banana Brownie Oats

Ingredients:
• 1 ripe banana
• 1/2 cup rolled oats
• 1 egg
• 1/4 cup milk
• 1/4 cup plain Greek yogurt
• 1 1/2 tbsp cocoa powder
• 1 tbsp maple syrup or honey
• 1/2 tsp vanilla extract
• 1/2 tsp baking powder
• 1 tbsp mini chocolate chips

How to make it:

Mash the banana in a clear mixing bowl.
Add the egg, milk, Greek yogurt, maple syrup, and vanilla. Mix until smooth.
Add the oats, cocoa powder, and baking powder. Stir into a thick chocolate batter.
Fold in the mini chocolate chips.

Ingredients

Oat Cinnamon Crust
• 1 cup rolled oats
• 1/2 cup oat flour
• 1 tsp cinnamon
• 2 tbsp maple syrup
• 2 tbsp melted butter or coconut oil

Protein Cheesecake Layer
• 1 cup plain Greek yogurt
• 1 cup cottage cheese
• 1 whole egg
• 1 scoop vanilla protein powder
• 2 tbsp maple syrup or honey
• 1 tsp vanilla extract
• 1/2 tsp cinnamon

Apple Pie Topping
• 1 medium red apple, diced small
• 1 tsp cinnamon
• 1 tbsp maple syrup
• 1 tsp lemon juice, optional

How to make it
Press the oat crust into an 8x8 baking dish. Blend the cheesecake ingredients until smooth, then pour over the crust. Toss the apple pieces with cinnamon and maple syrup, then spread them over the top.

Bake at 350°F / 175°C for about 30–35 minutes, or until the center is set. Let it cool, chill if you want cleaner slices, then cut into 9 bars.
