Thank you for supporting our family and our homestead 🇺🇸

Today marks six years since I lost my dad, and one of the things I find myself thinking about on days like this are the little things that bring back memories.

The last cake I ever made for Dad was for his 70th birthday. He requested a homemade carrot cake, and of course, that’s exactly what he got. ❤️

So this weekend at The Rusty Rake Homestead, I’m making Dad’s Favorite Carrot Cake in his memory. 🥕🍰

Now, before all you die-hard carrot cake lovers come for me… 😂 I know carrot cake is supposed to have cream cheese frosting. Unfortunately, as a cottage food baker, I’m not allowed to make cream cheese frosting.

BUT… I’ve come up with the closest dupe I can. This will be a buttercream frosting flavored with a cream cheese/cheesecake-style flavoring to give it that familiar tangy cream cheese frosting flavor without actually using cream cheese.

And honestly, I think you’re going to love it.

The cake itself is homemade, moist, loaded with all the good carrot-cake goodness, and made with a whole lot of love and a little bit of Dad mixed in.

So if carrot cake is your thing, come give Dad’s favorite a try this weekend. And please remember… don’t come for the baker. I know. 😂 I’m working within the cottage food rules!

Sometimes a recipe is more than just a recipe. Sometimes it carries a memory. ❤️🥕

Next question-
Do you prefer nuts? Or NO nuts?
If you did want nuts would it be crushed walnuts or crushed pecans? Let me know in the comments ✍️
