Ingredients
8–10 spears
Fresh asparagus, trimmed

Large eggs
1 tbsp
Olive oil or butter
1 tbsp
White vinegar (for poaching)
To taste
Salt & black pepper

Parmesan shavings or chili flakes
Instructions

Prep the asparagusTrim the woody ends and rinse the asparagus.

Cook the asparagusHeat olive oil or butter in a pan and sauté asparagus 4–5 minutes until bright green and slightly tender.

Boil water for poachingBring a small pot of water to a gentle simmer and add vinegar.

Poach the eggsCrack each egg into a small bowl, swirl the water, gently slide the egg in, and poach 3 minutes for a soft yolk.

Ingredients

almond flour
2 tbsp
coconut flour
1/2 cup
pumpkin puree (unsweetened)

granulated erythritol (or monk fruit)

vanilla extract

baking powder

pumpkin spice
