I am a huge foodie who loves healthy, sustainable whole plant food, and nothing gives me greater pleasure than sharing that passion with others. Does Meditation Affect Cellular Aging? |

Dr. Dean Ornish showed that his plant-based diet, exercise, and stress management intervention could in effect reverse the aging of our DNA. What effect might the stress management component have had?


Several of you asked for the recipes for the Spicy Black Bean Brownie and Chocolate Chip Cookie Cake, so here you go:

Spicy Black Bean Brownie

1 1/2 cups oats
I - 14.5 oz can black beans, drained (or 1 1/2 cups cooked blacked beans)
2 T nut butter (I used sunflower seed butter, but peanut butter or any nut butter will work)
1 cup dates, pitted and soaked (Medjool dates work best and require less soaking to soften. Raisins would work here too.)
splash of maple syrup (optional)
1 ripe banana
1 tsp vanilla
1/2 cup cocoa powder
2 tsp cinnamon (optional, though probably best to leave in if using cayenne)
1/2 tsp cayenne (optional)
1 tsp baking powder

Process oats in food processor. Add black beans and process. Add remaining ingredients and process. Press mixture into pan lined with parchment paper. Bake at 350 for 20-30 minutes, or until brownies spring back. Note: You could make this without a food processor by mashing the beans and banana with a fork and replacing oats with whole wheat flour.

Chocolate Chip Cookie Cake

1/2 cups oats
1 - 14.5 oz can chickpeas, drained (or 1 1/2 cups cooked chickpeas)
1/2 cup nut butter (I used sunflower seed butter, but peanut butter or any nut butter will work)
1/2 cup date sugar
1/4 cup maple syrup
1 tsp vanilla (though I may have accidentally omitted)
1 small sweet potato, baked
1/2 cup unsweetened applesauce
1 cup whole wheat flour (I used spelt)
1/4 tsp baking soda
1 tsp baking powder
pinch sea salt (optional)
1/4-1/3 cup vegan chocolate chips

Process oats in food processor. Add chickpeas and process. Add remaining ingredients except chocolate chips and process. Press mixture into pan lined with parchment paper. Press chocolate chips into the top of the cake. Bake at 350 for 20-30 minutes, or until golden brown. Note: You could make this without a food processor by mashing the chickpeas and sweet potato with a fork and replacing oats with another 1/2 cup of flour, or vice versa.

I'm going to be teaching weekly healthy cooking classes at the food pantry and am collecting gently used kitchenware/small appliances to give to participants who may not be able to afford their own. Donations can be taken directly to Loudoun Interfaith at 750 Miller Dr, SE Leesburg. You can also bring them to any of my yoga classes at Claude Moore Recreation Center.
