Need a new clean eating recipe that everyone can enjoy, and help save time in the mornings getting out the door? Check out these super cool individual baked oatmeal cups! I'll have to start making these and send the kids and the hubs off to school with a great healthy meal!

Ingredients:
• 1 egg
• 1 teaspoon vanilla extract
• 1 cups applesauce, unsweetened
• 1 banana, mashed
• 1/4 cup honey
• 2 1/2 cups, Old Fashioned rolled oats
• 1/8 cup chai seeds (optional)
• 1 tablespoon ground cinnamon
• 1 1/2 teaspoon baking powder
• 1/2 teaspoon salt
• 1 1/4 cups milk
• Optional toppings: blueberries, raisins, walnuts, chocolate chips, pomegranate seeds.
Directions
Preheat oven to 350 degrees.
Mix eggs, vanilla, applesauce, banana and honey together in a bowl. Add in oats, cinnamon, baking powder, salt and mix well with wet ingredients. Finally pour in milk and combine. Line a 12 cup muffin tin with paper liners.
Divide mixture evenly into muffin tin cups. I used a 1/4 measuring cup, measure just a tad under 1/4 cup to make 12 servings. Add the toppings.
Bake 25-30 minutes until a toothpick in center comes out clean. Cool and enjoy or freeze them in gallon freezer bags.

Made it through yesterday pretty easy, even took in a zumba class with my girls.
I will say the Slow Cooker Chicken for dinner was the BOMB!!!!
On to Day 2
Breakfast - broccoli frittata and a cup of fruit
Lunch - Chili and raw veggies
Dinner - Tuscano soup and smashed sweet potato cakes
TODAY IS THE DAY! Week 1, Day 1 of my affair with my Paleo Cupboard Cookbook. 😆
Today's menu:
Breakfast - broccoli mushroom frittata and a cup of fruit
Lunch - tuna w/mayo on a bed of mixed greens with a cucumber
Dinner - slow cooker chicken and asparagus.

Took the boy to the Ortho Dr this morning, next step MRI again. After I got home I decided I needed a stress reliever, so it was CIZE to the rescue. Nothing like dancing off a little tension. Thanks Shaun T!

After the hectic week and weekend, thank goodness Beachbody On Demand provided me with some tension relieving Yoga this morning. Now I'm ready to face the day!
