Well, today’s intended long run was a reality check. Yesterday I only ate one meal, spent hours walking around the city with friends, and barely hydrated. So when I struggled through my run this morning, it wasn’t exactly a shock. 😅
Consider me thoroughly reminded to fuel and hydrate properly. 🙃💦🏃🏼♀️

High Protein Banana Oat PB Chip Cookies 🍪 🍌
Ingredients
• 2 ripe bananas, mashed
• 1 cup old-fashioned oats
• 1 scoop vanilla protein powder (I only had pb flavor)
• 1 tbsp chia seeds
• 1 tsp vanilla extract
• 2-3 tbsp sugar-free peanut butter chips
• Optional:
• ½ tsp cinnamon (I definitely recommend😍)
• pinch of salt
• 1-2 tbsp almond milk if mixture is too thick
• 4-5 dark chocolate chips on top before baking
Instructions
1. Preheat oven to 350°F.
2. Mash bananas until smooth.
3. Stir in vanilla, protein powder, oats, and chia seeds.
4. Fold in peanut butter chips.
5. Let mixture sit 5 minutes so oats and chia absorb moisture. (I chilled mine in the freezer for an hour while I made dinner)
6. Scoop onto a lined baking sheet and flatten slightly.(top with dark chocolate chips if desired)
7. Bake for 12-15 minutes until edges are lightly golden.
Per Cookie: (I made my batch into 12)
~80–95 calories each
Estimated Protein:
Around 5–7g protein per cookie depending on the protein powder used.
