🍋🫐 Wild Blueberry Lemonade Butter Cake

Fresh, refreshing, and soft!

Ingredients

For the cake
• 2 + 1⁄2 cups all-purpose flour
• 2 teaspoons baking powder
• 1⁄2 tablespoon baking soda (not baking powder—I corrected it according to the recipe, but you can leave it as is if you prefer)
• 1⁄2 teaspoon salt
• 1 cup unsalted butter (softened)
• 1⁄2 cup granulated sugar
• 3 large eggs
• 1 tablespoon lemon zest
• 3 tablespoons fresh lemon juice
• 1 cup buttermilk
• 1 + 1⁄2 cups fresh blueberries
• 1 tablespoon flour (for dusting the blueberries)

For the Glaze
• 1 cup powdered sugar
• 2–3 tablespoons fresh lemon juice



🍰 Instructions
1. Preheat the oven to 350°F (175°C). Grease a 9-inch (24 cm) cake pan and lightly flour it.
2. In a bowl, mix the flour, baking powder, baking soda, and salt.
3. In a separate bowl, cream the butter and sugar until light and fluffy.
4. Add the eggs one at a time, then add the lemon zest and lemon juice.
5. Alternately add the dry ingredients and buttermilk, mixing with a spatula until homogeneous.
6. Coat the blueberries in a separate bowl with 1 tablespoon of flour, add them to the batter, and mix gently.
7. Transfer the batter to the pan and bake for 50–60 minutes, checking regularly.
8. Once the cake has cooled completely, drizzle the glaze made with powdered sugar and lemon juice over the top.

Mini Butterscotch Cinnamon Roll Cheesecakes 🧁🍮

Creamy, swirled, and melt-in-your-mouth delicious!

Ingredients:

Crust:

1½ cups crushed biscuits

¼ cup melted butter

2 tbsp brown sugar

Filling:

16 oz (450 g) cream cheese, softened

½ cup sugar

2 large eggs

1 tsp vanilla extract

½ cup butterscotch sauce (plus extra for topping)

Cinnamon swirl:

2 tbsp brown sugar

1 tsp ground cinnamon

2 tbsp melted butter

Instructions:

1. Preheat the oven:

Preheat oven to 325°F (160°C).

Line a muffin tin with cupcake liners.

2. Prepare the crust:

Mix crushed biscuits, melted butter, and 2 tbsp brown sugar until combined.

Press about 1 tbsp of the mixture into the bottom of each cupcake liner.

Bake for 5 minutes, then let cool slightly.

3. Prepare the filling:

In a bowl, beat the cream cheese until smooth.

Add sugar, eggs, and vanilla extract, mix until creamy.

4. Prepare the cinnamon swirl:

Mix 2 tbsp brown sugar, cinnamon, and melted butter in a small bowl.

5. Assemble the cheesecakes:

Spoon cream cheese filling over the crust in each cupcake liner.

Drizzle a little butterscotch sauce on top.

Add a small amount of cinnamon mixture and swirl gently with a toothpick for a marbled effect.

Christmas Fruit Loaf Cake

Ingredients
• 2 cups (250g) all-purpose flour
• 1 cup (200g) brown sugar
• 1 cup (230g) unsalted butter, softened
• 4 large eggs
• 1 tsp baking powder
• ½ tsp baking soda
• ½ tsp salt
• 1 tsp ground cinnamon
• ½ tsp ground nutmeg
• ½ tsp ground cloves
• 1 tsp vanilla extract
• ¼ cup (60ml) orange juice
• 1 tbsp orange zest
• 1 cup (150g) mixed dried fruits (raisins, sultanas, cranberries, cherries)
• ½ cup (80g) chopped nuts (almonds, walnuts, pecans)
• 2 tbsp flour (for coating fruits)
• Optional: 2 tbsp rum or brandy for soaking fruits

Instructions
Cream butter and sugar until light and fluffy, then beat in eggs one at a time. Add vanilla, orange juice, and zest. In another bowl, whisk flour, baking powder, baking soda, salt, and spices. Toss dried fruits and nuts with 2 tbsp flour to prevent sinking. Gently fold dry ingredients into wet mixture, then fold in fruits and nuts. Pour batter into a greased and lined loaf pan. Bake at 160°C (320°F) for 60–75 minutes, or until a toothpick comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack.

For extra flavor, brush the top with a little rum or brandy while warm. Dust with powdered sugar or glaze for a festive finish.

Ingredients

200 g (1 1/2 cups) fresh strawberries (plus extra for topping)

2 tbsp sugar (for macerating strawberries)

200 ml (3/4 cup + 1 tbsp) heavy whipping cream (cold)

2 tbsp powdered sugar

1 tsp vanilla extract

300 ml (1 1/4 cups) strawberry ice cream (softened slightly)

300 ml (1 1/4 cups) vanilla ice cream (softened slightly)

100 g (1 cup) meringue kisses (white and pink, mixed)

100 g (1 cup) granola or crushed cookies

3–4 tbsp caramel sauce

3–4 tbsp strawberry sauce

For Decoration:

Whipped cream swirls

Fresh whole strawberries, dusted with powdered sugar

For the sponge:

4 large 🥚 eggs

¾ cup 🍚 granulated sugar

1 tsp 🍦 vanilla extract

¾ cup 🌾 all-purpose flour

1 tsp baking powder

Pinch 🧂 salt

Purple food coloring (optional)

For the filling:

1 cup 🥛 heavy cream

2 tbsp powdered sugar

1 tsp vanilla extract

¾ cup fresh or frozen blackberries 🍇

2 tbsp blackberry jam

📝 Instructions:

🔥 Preheat oven to 350°F (175°C). Line a jelly roll pan with parchment.

🥚 Beat eggs and sugar until thick and pale. Add vanilla and purple coloring if using.

• 1 handful Mint, fresh leaves
• 6 cups Watermelon
• 1 Sea salt flakes and fresh ground black pepper
• 6 oz Feta cheese

**Instruction:
1. Prepare Ingredients:
- Cut watermelon into bite-sized cubes.
- Slice cucumber into thin rounds or half-moons.
- Chop mint leaves.

2. Assemble Salad:
- In a large bowl, combine watermelon, cucumber, and mint.
- Crumble feta cheese over the top.

3. Dress & Season:
- Drizzle with fresh lime juice and zest.
- Sprinkle with sea salt flakes and black pepper to taste.

Pecan Pie Dip:

8 oz cream cheese, softened

1/4 cup unsalted butter, softened

1 cup powdered sugar

1/2 cup brown sugar, packed

1 tsp vanilla extract

1 cup chopped pecans

Add caramel and pecans on top and bottom

Graham crackers or apple slices for dipping

Instructions:
