I consider myself a rotisserie chicken expert. 😂

Tuesday starts my work week, so one of my first stops is usually my local grocery store.

I grab a rotisserie chicken, a bag of chopped lettuce and my favorite Green Goddess dressing. Add whatever fresh veggies look good, and lunch is basically DONE.

And don’t be afraid of the the lettuce! Just check the brand and current recalls, skip the alfalfa sprouts for me, and keep it moving.

When I want to switch things up, I’ll grab a steam-in-the-bag cauliflower rice or another easy veggie.

One grocery trip. Minimal prep. A nutritious, budget-friendly lunch I can stretch for about four workdays.
