I made some Spring vegetable fried rice 🍛 with leftover white rice I had sitting in my fridge.
It turned out absolutely wonderful! I’m having it for lunch with toaster oven baked salmon 🐟and half an avocado 🥑.
To make the rice heat a tablespoon of olive oil in a pan on the stove top.
Add 1/4 cup chopped yellow onion and sauté for 3-4 minutes until the onion starts to soften. Add 1/2 cup chopped asparagus and 1/2 cup sliced cremini mushrooms.
Season with salt and pepper and continue to cook another 3-4 minutes until tender then mix in 1/2 cup peas until heated through.
Once the veggies are cooked add 1 cup cooked white rice.
Turn up the heat if needed and sauté the rice into the veggies. Push the rice and veggies to the sides of the pan to form a hole in the middle.
Add a splash of olive oil then add a beaten egg.
Let the eggs set for a moment then scramble the eggs into the rice.
Makes about 2 servings.

You can use pre cut cauliflower rice to make this even quicker...it's found every where these days.⠀
My 2 favorites are Trader Joe's brand and the big frozen bags found at Costco.⠀

makes about 4 servings⠀

Ingredients:⠀
1 small cauliflower head, broken into florets⠀
1 lb. raw shrimp, peeled and deveined⠀
1 Tbsp olive oil or avocado oil ⠀
2 medium zucchini, cut into bite sized pieces⠀
1 red bell pepper, diced⠀
1 yellow bell pepper, diced⠀
2 Tbsps coconut aminos, Bragg's liquid aminos, or low sodium soy sauce ⠀
1 tsp garlic salt⠀
1 tsp ginger powder⠀
1 Tbsp sesame seeds⠀
⠀
Enjoy immediately, OR:⠀
You can divide your shrimp cauliflower rice equally among 4 airtight containers and refrigerate for up to 4 days. ⠀

TEN - MINUTE HONEY - MUSTARD SALMON 🍒🍏🍎🍐🥬🥦🥒🌶
Just made this salmon for lunch and served it on top of my avocado and feta toast made with HOMEMADE GF SOURDOUGH ! Seriously the perfect meal .
Deets :
1 pound coho salmon patted dry and seasoned with salt and pepper . Heat 1 tablespoon ghee over medium heat and sear for about 4 minutes then flip and cook for another 4 minutes .
2 Mix together 1 tablespoon honey and 1 tablespoon whole grain dijon mustard then spread on top of the salmon .
3 Toast a piece of sourdough , smear some avocado and add some feta cheese and a drizzle of olive oil .
4 Serve with cucumbers with sea salt , h**p seeds and coconut aminos 🟡🟢

Citrus Shrimp Noodle Bowl with Avocado & Spicy Mayo! I made this one in between developing holiday recipes, and it is not very ~wintery~ but had to share the recipe anyway!!
To make, I used 3 bricks of brown rice noodles and tossed them in a little bit of sesame oil and juice of 2 limes.
I sautéed some shrimp in a pan with ghee and added to the noodles along with diced avocado, half an orange, peeled and diced, about 2 tbsp chopped red onion, sesame seeds, and cilantro.
To make spicy mayo, I mixed together 1 tbsp avocado oil mayo with 1 1/2 tbsp sriracha
