For the days when cooking is the last thing on your mind, fresh seafood makes dinner simple. From tuna crostini and poke bowls to ceviche and crudo, these are five ways to keep things fresh without turning on the oven.

Elote Shrimp Cups 🌽🍤
Crispy tortilla cups loaded with smoky adobo shrimp, creamy elote-style corn, guac, cotija and plenty of lime. It’s everything you’ll want in a summer bite ☀️
Save this one for your next taco night, cookout, or easy appetizer 👇
For the shrimp:
• 1 lb OceanBox shrimp, peeled + deveined
• 1 tbsp olive oil
• 3–4 tbsp adobo sauce
• 1 tsp smoked paprika
• ½ tsp chili powder
• ½ tsp cumin
• ¼ tsp garlic powder
• Juice of ½ lime
• Salt + pepper
For the elote corn:
• 2 cups corn, fresh, canned or thawed from frozen
• ⅓ cup mayo
• ¼ cup sour cream
• ½ tsp chili powder
• ¼ cup crumbled cotija
• Juice of ½ lime
• ¼ cup chopped cilantro
• Salt to taste
For the tortilla cups:
• 6 small flour tortillas (6-inch)
• Olive oil spray or olive oil for brushing
• Tajín or garlic salt, optional
For the guac:
• 2 ripe avocados
• Fresh lime juice
• Salt + pepper
To finish: extra cotija, cilantro, lime wedges + your favorite hot sauce.
How to make them:
1. Heat oven to 375°F. Warm the tortillas in the microwave for about 10 seconds to make them pliable, then press each one into a greased muffin tin. Lightly coat with olive oil and add a little Tajín or garlic salt if you want. Bake for 12–15 minutes, until crisp and golden.
2. Cut the shrimp into bite-sized pieces. Toss with olive oil, adobo sauce, lime juice, smoked paprika, chili powder, cumin, garlic powder, salt and pepper. Let them marinate for 10–15 minutes, then sauté or grill over medium-high heat until just cooked through.
3. Mix the corn with mayo, sour cream, chili powder, cotija, lime juice, cilantro and a pinch of salt.
4. Mash the avocados with lime juice, salt and pepper, leaving a little texture.
5. Add a spoonful of guac to each crispy tortilla cup, then pile on the adobo shrimp and creamy elote corn. Finish with cotija, cilantro, lime and hot sauce.
Make these once and we promise they’ll be on repeat.

From savory soy ginger to bright lemon garlic, these are four easy combinations we love for adding tons of flavor to fresh fish without overcomplicating it.
Mediterranean Herb
¼ cup olive oil
2 cloves garlic, minced
2 tbsp chopped fresh herbs
2 tbsp finely chopped onion
½ cup cherry tomatoes
⅓ cup olives
Salt + pepper
Soy Ginger
¼ cup soy sauce
1 tbsp sesame oil
2 cloves garlic, minced
1 tbsp freshly grated ginger
Miso
¼ cup white miso paste
2 tbsp mirin
2 tbsp cooking sake
1 tbsp brown sugar
Lemon Garlic
¼ cup melted butter
Juice of 1 lemon
2 cloves garlic, minced
2 tbsp chopped fresh herbs
Salt + pepper
Mix, marinate your fish, and cook your favorite way. Save this one for the next time you need a little inspiration.

Brown butter scallop rolls have been our favorite way to eat scallops this summer 🤤
Pat your scallops very dry, then season with salt and pepper. Melt 2 tbsp Churn Butters garlic & shallot butter in a hot pan and sear the scallops for 2–3 minutes per side until golden. During the last minute, spoon the melted butter over the scallops to baste.
Toast your buns, spread with spicy mayo, then layer with pickled cucumbers + carrots and the buttery seared scallops.
Best served warm with a little extra spicy mayo ✨

Summer crab cakes are officially back 🦀☀️
Crispy on the outside, packed with sweet lump crab meat, and made with just enough filler to hold everything together. If you’re looking for an easy summer dinner or appetizer, this one’s always a favorite. Save this recipe for later! 👇
Recipe:
• 1 can OceanBox Lump Crab Meat
• 1 egg
• 2 tbsp chopped parsley
• ½ cup mayo
• 1 tbsp mustard (Dijon + whole grain)
• 2 tsp Worcestershire sauce
• 1 tsp Old Bay
• Optional hot sauce, to taste
• ½ cup breadcrumbs (add up to 2 tbsp more if needed)
• Optional: 2 tbsp melted butter
Directions:
1. Whisk together the egg, parsley, mayo, mustard, Worcestershire sauce, Old Bay, and hot sauce (if using).
2. Gently fold in the crab meat and breadcrumbs until everything is evenly combined without breaking up the crab. If the mixture feels too loose, add a little more breadcrumbs until it holds together.
3. Cover and refrigerate for at least 30 minutes (or overnight for even better flavor).
4. Scoop about ⅓ cup of the mixture onto a lightly oiled baking sheet and brush the tops with melted butter.
5. Bake at 400°F for 15 minutes, or until the tops are lightly golden. Serve with remoulade—or enjoy them just as they are.
