Almost One Year of Oh My Loaf: Grateful for Every Crumb 🍞
Almost one year ago, Oh My Loaf was just an idea, a few bags of gluten-free flour, and a slightly stubborn vegan chef who believed bread could be better.
Since then, it has grown one loaf, one roll, one farmers market, one customer, and one lesson at a time.
I’m deeply grateful to everyone who has tasted, supported, encouraged, bought, shared, or simply cheered me on along the way. Every kind word, every returning customer, and every “I can’t believe this is gluten-free” has kept this little bread dream rising.
This past year wasn’t perfect. There were long nights, early mornings, dough experiments, oven battles, and plenty of flour on my shirt. But there was also joy, growth, community, and proof that something meaningful can start very small.

I get asked all the time what kind of bread I actually eat for breakfast, so I figured I’d show you my little morning bread lineup.
Some days it’s Loaf You Like Crazy, soft and sliceable. Some days it’s Seed the Moment, hearty, seedy, and the kind of loaf that makes breakfast feel like it has its life together. Then there are the rolls, especially our seeded rolls and now our new Kaiser rolls, which replaced the ciabatta because, honestly, they came out even better.
Everything is gluten-free, vegan, gum-free, and made with whole-food ingredients, because I want bread that tastes good and doesn’t feel like a science project in my stomach.

One of the biggest game changers I discovered wasn’t a special flour blend. It was steam. 💨🍞
Adding steam during the first 15-20 minutes of baking helps delay crust formation, giving your loaf more time to rise before the outside sets.
The result?
✅ Better oven spring
✅ Softer crumb
✅ Crispier crust
✅ Less dense bread
My simple trick: Place a small ovenproof pan of hot water on the bottom rack while baking, then remove it after 20 minutes.
Sometimes the smallest changes make the biggest difference.
