There’s so much fresh produce that I want to take advantage of and sometimes a fresh salad with a yummy dressing is the best way to showcase it!

This makes 3-4 servings of salad.

Dressing
1/2 cup water
1/3 cup @ArtisanaOrganics almond butter
1 tbsp miso
2 tbsp sesame oil
~1/2 inch piece of fresh ginger
1 tsp maple syrup
juice from 1/2 lime
salt/pepper to taste

Salad
2 cups cooked edamame
2–3 cups red cabbage – shredded (about 1/2 of a cabbage)
1 cup cooked quinoa
2 carrots – shredded or finely sliced
1 jalapeno – finely sliced with seeds removed (omit if sensitive to spice)
1 cup finely chopped cilantro

INSTRUCTIONS
In a blender, blend together all dressing ingredients until smooth.
Mix together all salad ingredients in a large bowl.
Pour dressing over salad and mix.

🍓Strawberry Bread 🍓 by @StelleAndCoBakes is just THE THING. (Yes, it’s grain & dairy free)

This bread is made with homemade chunky strawberry jam, which gives if a subtle pink glow. It's topped with a creamy strawberry frosting or glaze.

Here's how:
YIELD: 8-10 SLICES

Prep time: 20 minutes Bake Time: 40 minutes

INGREDIENTS

1 C almond flour
1/2 C coconut flour
1/2 C tapioca starch
1 tsp baking powder
1/2 tsp baking soda
1/2 C strawberry reduction (made from 1 C chopped strawberries)*
1/4C full fat coconut milk
1 tsp lemon juice
3 large eggs
1/4C pure maple syrup
1/2C granulated sweetener for the reduction*
1/4C refined melted coconut oil
1 tsp vanilla extract
Strawberry glaze
1/4C mashed strawberries*
1/4 coconut milk
3 tbsp coconut butter
3 tbsp pure maple syrup

DIRECTIONS

Prepare the reduction:
1) Chop strawberries (about 1 cup worth). Dump in the saucepan with the 1/2C sugar and bring to a soft boil. Reduce heat to medium high and stir for 10-15 minutes, mashing berries up completely as you stir.
2) Keep stirring and mashing, until they look like a tomato sauce. Remove from heat and let cool slightly.
3) Preheat the oven to 350 degrees. Line a medium (8x4) loaf pan with parchment paper. In a medium bowl, stir coconut milk and lemon juice. Let sit to form a “buttermilk”.
4) In a large bowl, stir almond flour, coconut flour, tapioca starch, baking powder and baking soda.
5) Add eggs and maple syrup to coconut milk and whisk to combine. Pour this mixture into the dry mixture and stir until batter is mixed. Add in cooled strawberry reduction sauce.
6) pour batter into loaf pan. Bake for 35-40 minutes or until top has set and knife inserted comes out clean.
Make the glaze:
7)) While loaf bakes, mash 1/4C strawberries in a small bowl. Add in melted coconut butter and stir in coconut milk and maple syrup.
8) spread glaze over cooled loaf, and slice.

Waheeee you guys SAVE this lil ripper of a brekky cos it’s a texture and flavor gasm and a half!!
Like rice pudding but with that add on of gorgeous creamy oat ness. Full of plantbased proteins and topped with vitamin and nutrient rich fruits

INGREDIENTS ::

- 1 cup oats
- 2 cups plant milk
- 1/2 cup water
- 3/4 cup cooked jade Pearl rice
- 1/4 tsp vanilla
- 1/2 mashed banana
- 1/4 tsp cinnamon
- 1 tsp maple syrup

TOPPINGS ::

- hemp seeds
- papaya
- mango
- kiwi fruit
- nut butter of choice

IN a pot add your oats, milk, water, vanilla and cinnamon. Bring to the boil, reduce heat and simmer for 3-5 mins, half way through cooking add your rice and mashed banana.

Once cooked, add to your bowl, top with your fruits, hemp seeds and nut butter and float away into brekky heaven. IM SO EXCITED about this one! I hope you love it as much as I do!!

= Recipe =

Yield: 12 cookie cups

PrepTime: 10 minutes Bake Time: 12 minutes

:: Cookie dough ::
1 C almond flour
1/4 C tapioca starch
1/4C coconut flour
1/3C cocoa or cacao powder
1 tsp baking powder
Dash of salt
1/2C coconut sugar
1/4C Maple syrup
1/3C softened palm oil shortening* OR refined softened coconut oil
1 large egg or 1 flax egg
1 tsp vanilla extract

:: Creme Filling ::

2 tsp matcha powder
1/4C maple syrup
1/4 C coconut milk
3 tbsp coconut butter

:: Directions ::

1) Preheat the oven to 350 degrees

2) Line a muffin tin with liners, or oil generously and set aside.

3) in a large bowl, mix almond and coconut flour, cocoa or cacao and salt and baking powder.

4) Stir in melted coconut oil. Then, form a well and add beaten egg, vanilla extract and coconut sugar. Stir to form dough— if using coconut oil and dough is too crumbly, add 1 more tbsp coconut oil.

5) Scoop dough into each cavity of muffin tin, using a cookie scoop or tablespoon.

5) Bake for 12-15 minutes, until top of each cookie has set. Immediately make a well using the bottom of a tablespoon in each cookie.

6) Let cool. Prepare frosting ingredients in a small bowl by melting coconut butter then stirring in maple syrup and coconut milk. Chill in freezer for 10 minutes to thicken.

7) Pour frosting in the center of each cup. Let set and enjoy!

8) Store in airtight container at room temperature.

1 tsp @celticseasalt
½ tsp ground cumin 
½ cup ice cold water

I roasted my garlic drizzled with olive oil and a pinch of salt in foil in the air fryer for 20-25 min. Then, simply add all of the ingredients to a high-speed blender (I used my vitamix) or a food processor and blend until it’s all combined. Taste and adjust more salt/lemon to your liking. I garnished it with more EVOO, fresh chopped parsley and sumac.

Ingredients:
• 1/2 cup frozen berries
• 1/3 cup steamed then frozen purple sweet potato
• 1/3 cup steamed then frozen zuchinni
• 1/2 an avocado
• 1/3 cup frozen banana
• 2/3 cup nut milk
• 1 scoop chocolate protein powder(I use @ancientnutrition)
• 1 tsp spirulina

Toppings:
• Fresh berries
• Banana slices
• Coconut shreds
• Chia seeds
• @larkellenfarm grain free sprouted Berrylicious granola
• Dairy free yogurt mixed with 1 tsp blue spirulina powder
• A swirl of @artisanaorganics Mac-Coconut nut butter
