🧪 Pop quiz: Is the vinegar in your pantry actually strong enough for pickling? 🤔

Here's the plot twist 👉 some store-bought white vinegar has quietly dropped to 4% acidity, and that 1% makes a BIG difference for food safety. 😮

Every batch we make has to pass a chemistry test before it earns a label. It involves a syringe, a few drops of indicator, and Nicole hunched over a tiny glass of vinegar waiting for it to blush. 🩷 (Yes, really. Vinegar blushes. Science is fun.)

In our newest blog post, we're spilling it all:
🔬 How we test every batch (a.k.a. waiting for the pink)
🎯 Why 5% is the magic number
🏷️ What to look for on the label before you pickle
🧦 Why testing our red vinegars is like finding a pink sock in a pile of red laundry

Nerdy? Absolutely. Useful? Even more. 🤓💚

🫙 CONFESSION TIME.

There was a bottle of our live vinegar in the back of my cabinet with maybe two inches left. Six or seven months went by. When I finally grabbed it? There was a BLOB in there. Pale, jelly-like, just living its best life. 😅

Then I remembered — that’s the mother, and she’s supposed to be there.

Live vinegar isn’t sterile, it’s alive. Give a nearly-empty bottle enough air and enough time, and a new mother builds right up. Totally normal, totally safe.

Your options:
🟢 Leave it — shake or pour around it
🟢 Strain it — coffee filter, done, vinegar’s unaffected
🟢 Save it — she can start a whole new batch

Pro tip: headspace is NOT your friend. Down to the last bit of a bottle? Move it to a smaller jar so there’s less air on top. Less air, less blob. 💛

Full story (and why she’s nothing to be scared of) on the blog 👇

Splitting your DIY Pickling Brine Kit? Here’s the right way to do it. 🥒

Your kit comes with 1½ cups of 5% brine — enough to fill two pint jars with ¾ cup each. Add a cup of veggies to each jar, don’t stress if the spices aren’t split perfectly evenly (the flavor carries over regardless), and keep water to a HALF CUP max per jar. Any more and you’ll water down that 5% acidity you need for a proper pickle.

Pop them in the fridge and give it 48-72 hours minimum before you dig in — patience makes the pickle. And don’t toss that brine when the veggies are gone: it’s good for a second batch, so restock the jar and let it work its magic all over again.

Two jars, two flavors, twice the use. Full instructions on the site!

We need to talk about margarita night. 🍹🧂

A couple weekends ago a customer grabbed 2 bags of our Hot Aji Mango Pepper Salt to rim margarita glasses for girls’ night — and the whole group raved about it so much she came back for more. So obviously we had to test it ourselves. 🍸

Verdict: slightly spicy, almost fruity salt + tequila (and a splash oh Hennesy) + lime and orange = pure magic. This one’s staying in the rotation for good. 🥂

To the customer who started it all — thank you, thank you!

Grab your own bag and see what the hype’s about. 👉 https://www.thetickledpickler.com/product-page/hot-aji-pepper-salt

Today? Worm food. 🪱💚

We’re pulling back the curtain (well, the compost) on one of our favorite parts of the zero-waste operation — vermiculture. Every scrap you see in this video is getting turned into rich, living compost that goes right back into our garden beds. Scraps in, soil out, next season’s ingredients fed. That’s the loop.

None of this happens at this scale without Slow Food Atlanta’s Good Food Grant 🙌 — funding our composting + vermiculture infrastructure from day one. Multiple worm bins, a full composter, and a whole lot of squiggling going on back there.

New blog post is live 📖 all about how the worms do the heavy lifting and why zero waste isn’t just a buzzword for us — it's our long term goals! Visit: https://www.thetickledpickler.com/post/from-scraps-to-squiggles-how-a-slow-food-atlanta-grant-is-helping-us-build-a-zero-waste-business
