Bree and Pear pie

Ingredients:
0.55 lb yufka dough or puff pastry dough (250 g)
0.44 lb pear (200 g)
0.33 lb Bree cheese (150 g)
0.04 lb butter (20 g)
4 eggs
2 teaspoons brown sugar
1 teaspoon thyme
1 tablespoon honey

Step 1
Thaw the sheet of dough and shape it into a rectangle. Place it on a baking tray and brush it with beaten eggs. Fold up the edges to form a border.

Step 2
Cut the pear into quarters and remove the core. Peeling is optional if the skin is not tough. Slice the pear into thin pieces, no thicker than about 1/5 inch (5 mm).

Step 3
In a small bowl, slightly melt the butter in the microwave. Add the brown sugar and stir until completely dissolved. Add the thyme leaves to the mixture.

Step 4
Arrange the pear slices neatly on the pastry sheet, slightly overlapping if desired. Do not cover the borders. Brush the pear slices with the butter-thyme mixture using a silicone brush or spoon.

Step 5
Preheat the oven to 375°F (190°C).

Step 6
Slice the Bree into thin pieces. Put them on the dough. Put pear slices on top of the Bree cheese. Put Return in the oven and bake for 20-25 min.

Step 7
Drizzle the finished tart with a thin stream of honey (not necessary step). Cut into portions and serve warm, before the cheese sets.
