In 1879 a London perfumer wrote that his six year old bottle of oil was still perfectly sweet. It came from moringa seeds, and perfumers prized it for having no scent of its own, so it could hold someone else's: cotton wool soaked in it, laid under flowers to take up their scent.

Here is the part worth knowing. In 1846 chemists pulled a new fatty acid out of that oil and named it after the oil. Behenic acid. The plant got there first.

What is the oldest bottle of anything in your house?

Rosemary has a number. In Europe it is E 392, an approved food additive, and the job it is approved for is stopping fats and oils from going rancid. Two compounds do the work, carnosic acid and carnosol, and the regulation measures the extract by exactly those two. In a 2020 laboratory comparison, matched at equal active concentration, rosemary extract outscored the synthetic antioxidants the food industry has leaned on for decades.

You have twenty five different receptors for bitter. Sweet runs on one. Bitter gets twenty five separate genes, because bitter is the taste that evolved to warn you off something. In 2002 researchers found that same receptor family outside the mouth, and in 2016 they confirmed it in human gut tissue in a study of thirty five people. Nobody has worked out yet what they are doing down there.

Which bitter thing did you hate as a kid and love now?

The green in a leaf and the red in your blood start out as the same molecule. Both are built on the same ring, by the same route, right up to the last step. Then the path forks: a plant drops magnesium into the middle of the ring, and we drop in iron. That one choice decides the whole job. Magnesium cannot hold oxygen at all, so it catches light instead. Iron is the one that carries the breath.

Same scaffold, two completely different lives. What else do you think plants and people have in common?

There is a chemistry lab that keeps turmeric on the shelf, on purpose. Turmeric's golden pigment, curcumin, turns a deep alarm red when it meets boron, and that color change is a standard laboratory test, used even on steel. The same pigment that stains your cutting board is precise enough for analytical chemistry.

Which spice always ends up staining your kitchen?

There is a test you can run in your own garden in about three seconds. Roll a stem between your fingers. If it has four flat sides, you are very likely holding a mint.

Sage. Rosemary. Basil. Oregano. Thyme. Lavender. Lemon balm. Not one of them tastes like mint, and all of them are mints. Lamiaceae runs to more than seven thousand species and it is most of what any herb garden is: square stem, leaves in opposite pairs, aromatic.

The square stem is a strong hint, not a law. Some mints miss it and a few other families have it too.
