AIP Strawberry Shortcake 🍓

Strawberries
· 1 cup strawberries
· 1 tbsp coconut sugar
Short Cake
· 1/2 cup coconut milk
· 3/4 cup tapioca starch
· 1/4 cup coconut flour
· 1/4 cup almond flour
· 1 tbsp gelatin
· A pinch of sea salt
· 1/2 tsp baking soda
· 3 tbsp palm shortening
For topping
· 1 cup coconut cream
· 1 tsp honey

INSTRUCTIONS
1. Preheat the oven to 375 F while lining a baking sheet with parchment paper.

2. Combine the coconut flour, tapioca starch, almond flour, salt, gelatin, and baking soda.

3. In a separate bowl add the palm shortening, honey and coconut milk. Stir well and combine with dry ingredients.

4. Once dough is formed, nest make the round shortcakes. Sizing depends on you. (Place shortcakes on baking sheet once finished)

5. Bake for 14 minutes and allow to completely cool before continuing.

6. Dip the strawberries into the coconut sugar and place in the refrigerator.

7. To make the topping and middle add coconut cream and honey together and place in refrigerator.

8. Slice the coconut sugared strawberries into thin slices.

9. When all other steps are complete, and the shortcakes are cooled add 2 tbsp of coconut cream and a few slices of strawberries in between the slices and on top.

Sour patch grapes 🍇

Ingredients:
· 1/4 cup swerve
· 1/4 cup lime juice
· 3 cups frozen grapes
Instructions:
1.Place grapes in lime juice
2.Next roll grapes in the swerve
3.Enjoy

Teriyaki shrimp stir fry 🍤

For the sauce
· 1/3 cup coconut aminos
· 2 tbsp honey
· 2 tsp arrowroot starch
· Salt and pepper
For the stir fry
· 1 tbsp avocado oil
· 1 small carrot
· 1 1/2 cups broccoli florets
· Salt and pepper to taste
· 2 minced garlic cloves
· 1 lb of peeled and deveined shrimp
INSTRUCTIONS
1. Combine the ingredients for the sauce in a small bowl and combine.
2. Using a large pan heat the oil over medium heat. Add the carrot and broccoli and saute. Season with salt and pepper and add the garlic at the end and saute.
3. Reduce the heat to medium-low and add the shrimp. Allow to cook for about 2 minutes before turning. Cook on the other side for another 2 minutes or until the shrimp is cooked through.
4. Add the vegetables to the pan with the sauce. Stir for 1-2 minutes or until the sauce is thick and fully coating the stir fry.
5. Enjoy !

AIP / Paleo St. Patty’s day Brownies 🍀

Ingredients:
· 2 cups Almond flouf
· 1/2 cup tapioca starch
· 1 cup melted coconut oil
· 1/2 cup maple syrup
· 4 tbsp cocoa powder
· 1/2 tsp baking soda
· 1 tbsp gelatin egg
· 1/4 cup water
For the frosting
· 1/2 cup coconut oil
· 2 tsp maple syrup
· 1/2 tsp matcha powder
INSTRUCTIONS
1. Preheat the oven to 350 F and line baking pan with parchment paper

2. In a mixing bowl combine the almond flour, tapioca starch, cocoa powder, and baking soda.

3. Next stir in the melted coconut oil and maple syrup.

4. Add the gelatin egg to batter and combine.

5. Spoon the batter into the baking pan and bake for 25 minutes.

6. Remove from the oven and allow to cool completely.

7. For the frosting combine the ingredients and whisk until fully combined.

8. Once brownies are fully cooled off apply frosting.

Enchilada bowl 🌿

· 1 lb ground beef or venison
· 1/2 diced onion
· 3 cloves minced garlic
· 3/4 tsp salt
· 1/4 tsp black pepper
· 1 tsp oregano
· 1 tsp cumin
· 1 1/2 cup enchilada sauce Siete Family Foods]
· 4 almond flour tortillas Siete Family Foods]
· 1/4 cup shredded dairy-free cheese @violife_foods
· 2 tbsp fresh cilantro
· Fresh lime wedges to serve

1.Put large pan over medium heat and add the ground beef / venison , onion, garlic, and seasonings. Crumble the meat until fully cooked.

2.Stir in the enchilada sauce and stir to coat the meat. Bring to a low simmer.

3.Add the tortillas and gently stir in coat in the sauce, let soften for 2-3 minutes.

5.Add the cheese and allow to melt than remove from heat

6.Top with cilantro, and serve with fresh lime wedges

Homemade Twix Bars🍫

( Does contain dark chocolate,do not eat if you have a sensitivity to that.)

For the shortbread
· 3/4 cup coconut flour
· 1/4 cup arrowroot starch
· 1/2 cup coconut oil, softened
· 1/4 cup maple syrup
· 1/2 tsp vanilla extract

For the date caramel
· 12 Pitted medjool dates
· 1/2 cup coconut milk
For the chocolate coating
· 2 tbsp coconut oil
· ¾ organic 100% Cacao unsweetened dark chocolate chips

INSTRUCTIONS
For the shortbread
1. Preheat the oven to 325 F and line an 8×8″ baking pan with parchment paper

2. Start with the crust by mixing together the coconut flour and arrowroot, and then stirring in the wet ingredients until well combined.

3. Flatten the crust in the bottom of the pan and puncture the crust with a fork.

4. Bake the crust until lightly golden brown for about 25 minutes. Let cool completely.

For the date caramel
1. Let the dates soak in warm water for 10 minutes to soften.

2. Strain the water and add the dates to a food processor. Continue to process as you slowly pour in the coconut milk. Process until the mixture is smooth and resembles caramel.

3. Layer the “caramel” over the shortbread crust evenly. Chill in the fridge for about an hour or until completely hardened.

For the chocolate coating
1. Assemble a double boiler by using a large pot and filling two-thirds of the way with water. Bring to a medium low simmer. Place heat safe bowl over the pot and fill with the chocolate and coconut oil. Stir to melt evenly. Carefully remove the bowl from the larger pot

2. Pour the chocolate over the date caramel layer and spread into an even layer. Allow the pan to cool slightly before transferring to the fridge to allow the chocolate to harden completely.

3. Transfer the twix to a cutting board and use a sharp knife to cut into bars.

Happy Valentine’s Day ❤️

Enjoy these AIP brownies that are made with love ❤️

Ingredients:
· 1/2 cup coconut flour
· 1/4 cup tapioca starch
· 1/4 cup carob powder
· 1/2 cup pumpkin puree
· 1/3 cup softened coconut oil
· 3 tbsp + 1 tsp honey
· 1/4 tsp baking soda
· 1 tbsp gelatin
· Berries to top the brownies



INSTRUCTIONS
1. Preheat the oven to 350 F.

2. Combine the coconut flour, tapioca starch, carob, and baking soda.

3. Mix in the pumpkin puree, honey and coconut oil and stir.

4. Pour the gelatin over 1/4 cup of water and allow to bloom for 1-2 minutes on medium heat.

5. Turn stove down to low heat and whisk gelatin egg until frothy.

6. Add the gelatin egg to the mixture and stir

7. Grease a baking dish with coconut oil and add the brownie batter into the dish.

8. Bake for 25 minutes.


9. Allow brownies to cool off completely before removing from dish.
