An easy weeknight dinner everyone loves!
Fajita seasoning I make my own (recipe below) but if you're in a pinch for time use taco seasoning!
�Seasoning �1 Tbsp chilli powder �1/2 Tbsp paprika�1 tsp onion powder�1/2 tsp garlic powder �1/4 tsp cumin�1/8 tsp cayenne pepper�1/2 tsp salt
Fajitas
1 red onions
3 bell peppers, any color �1 lb. chicken breast �2 Tbsp olive oil �1 lime
1/3 cup of water or chicken bone broth
* Preheat the oven to 400ºF. Mix all of the spices for the fajita seasoning in a small bowl with your oil, juice of one lime and water/bone broth and set aside �
* Cut the onion and bell peppers into 1/4-inch wide strips. Slice the chicken breast into thin strips. Add the chicken and vegetables to a large baking sheet �
* Drizzle the sauce you made cooking oil over the chicken and vegetables, then toss the ingredients until everything is well coated in the sauce . Spread the chicken and vegetables out over the baking sheet evenly.�
* Bake the chicken and vegetables in the preheated oven for about 35 minutes (depending how thick/thin you slice your chicken), stirring once halfway through. �
* Serve with your favorite tortilla and toppings!
Ingredients
* 1 large tomato
* 1 green pepper
* 1 medium onion
* 1 lb. of stew beef
* 1 1/2 tablespoons of olive oil
* salt & pepper to taste
* 1tbs of tomato paste
* 1/3 cup of water
Directions
* Chop the vegetables.
* Cube the meat.
* Heat the oil in a large pan.
* First brown the meat for about 5 min, then add onions and sauté for 5 min, then add your tomatoes and green peppers and saute for another 5 min. Add 1 tbs of tomato paste and 1/3 cup of water and cover with a lid let simmer on low for 15 min
* Salt and pepper to taste
