๐ง Creamy Chicken, Broccoli & Cheese Baked Rigatoni ๐๐ฅฆ
Creamy, cheesy, and packed with tender chicken and broccoliโthis baked rigatoni is the ultimate comfort food your family will ask for again and again! ๐๐
๐ Ingredients
For the Pasta
๐ 12 oz rigatoni
๐ฅฆ 2 cups broccoli florets
๐ 2 cups cooked chicken, shredded or diced
For the Cheese Sauce
๐ง 2 tbsp butter
๐ง 3 garlic cloves, minced
๐พ 2 tbsp all-purpose flour
๐ฅ 2 cups milk
๐ง 1 cup shredded cheddar cheese
๐ง ยฝ cup grated Parmesan cheese
๐ง 1 tsp Italian seasoning
๐ง Salt & black pepper, to taste
For the Topping
๐ง 1 cup shredded mozzarella cheese
๐ฟ Fresh parsley, chopped (optional)
๐ฉโ๐ณ Instructions
1๏ธโฃ Preheat oven to 375ยฐF (190ยฐC) and grease a baking dish.
2๏ธโฃ Cook rigatoni until al dente. Add broccoli during the last 2 minutes of cooking. Drain well.
3๏ธโฃ In a large skillet, melt butter and sautรฉ garlic for 30 seconds. Stir in flour and cook for 1 minute.
4๏ธโฃ Slowly whisk in milk until smooth. Simmer until slightly thickened.
5๏ธโฃ Stir in cheddar, Parmesan, Italian seasoning, salt, and pepper until the cheese is melted and the sauce is creamy.
6๏ธโฃ Add cooked chicken, broccoli, and rigatoni to the sauce. Toss until everything is well coated.
7๏ธโฃ Transfer to the prepared baking dish. Sprinkle mozzarella evenly over the top.
8๏ธโฃ Bake for 20โ25 minutes, or until bubbly and golden. Broil for 2โ3 minutes for an extra golden cheese topping if desired.
