I have found the most amazing gadget! Who here has also discovered the magic of fermentation kits for mason jars? I have made the most beautiful and delicious garlic dill pickles and now sauerkraut. These gadgets have simplified my entire canning process. Uh! Maz!. Ing!

Look at these super yummy candied Lemon Balm leaves! This is just one of the amazing things you can do with Lemon Balm and it’s super easy.

Harvest fresh Lemon Balm leaves and rinse clean, pat dry.

Mix three egg whites and 3 TBS with 1-2 cups of raw or white sugar and mix until it makes a thick wet batter.

Mix the Lemon Balm leaves into the batter with your clean hands.
*
Gently roll out the leaves to original shape and make sure they’re coated with the sugar batter. Place onto a very lightly greased or parchment paper on a baking sheet. Bake at 200 degrees Fahrenheit for 30-40 minutes, until crispy.

Remove the sugared leaves with a butter knife and allow to cool on a clean towel or cool baking sheet.

These can be used as a healthy snack, a quick treatment for nausea or upset tummies, baking decoration, and more! They taste delicious, much like lemon head candies.

Lemon Balm is a multi-use herb that’s great for upset tummy’s, GI recovery, or frazzled nerves by steeping into a tea. The leaves are a wonderful addition to salads, marinade, fish, and other recipes with the same tummy soothing benefits. Made into a balm it’s the perfect remedy for cold sores! And add to a blend of rosemary, basil, and peppermint and you have the best bug-repellant!

BTW- we love opossums. They have never bothered any of our chicken coops, though they’re predator secured coops. They have also kept our snake and mice population in check. Opossums are also north Americas only marsupial!
They’re a very necessary animal that unfortunately is very under appreciated and misunderstood.
Side note, Google “mom opossum with babies”. Adorbs!
