I've been making these protein balls for over 10 years now for the boys and me, and they never get old! I've changed up the add-ins here and there, but we always come back to the original version.

They're packed with protein, healthy fats, fiber, and wholesome ingredients that keep us fueled and satisfied.

✨ What's inside and why we love them:

🥣 Old-Fashioned Oats (gluten free) – A great source of fiber, especially beta-glucan, which supports heart health, digestion, and helps keep you feeling full longer.

🌱 Flaxseed – Loaded with omega-3 fatty acids, fiber, and antioxidants that support heart health, digestion, and overall wellness.

🥥 Unsweetened Coconut – Provides healthy fats, fiber, and minerals while adding delicious texture and natural sweetness.

🌰 Slivered Almonds – Rich in protein, healthy fats, vitamin E, magnesium, and antioxidants that support heart and brain health.

Happy Mother’s Day to all the amazing mothers!!!🌸🌺

Made up a different variation of our favorite go to snack/meal—our snackables.

This week I went with a little more veggies. Boiled eggs, delicious grilled chicken, English cucumber slices, sliced carrots, and fresh blueberries.

These cover ALL the nutritional bases in one simple bowl. Grab and go!

If you want- give the grilled chicken recipe a try!!

500g chicken breast, cubed
2 tsp avocado oil
1 tsp each: paprika, oregano, and garlic powder.
1/2 tsp: sea salt and pepper (you could do 1 tsp if your prefer, we like a little less of these two spices.

Cube chicken in a bowl, drizzle olive oil and stir. Add in the seasonings and mix well then let it marinate for a bit.

Cooking method:
Works well pan seared or in the Air fryer—whatever your preference 😊

✨ Parfaits
7oz Greek yogurt
Fresh sliced strawberries and blueberries
Granola
*hubby likes to add a little drizzle of honey 😉

✨ Snackables
Grilled chicken strips
Boiled eggs
Sliced English cucumbers
Fresh berries—strawberries, raspberries, and blueberries.

One of the boys’ favorite protein packed meal prep bowls right here 👇🔥
These Cheesy Beef Taco Potato Bowls are a total win — and that homemade pico de gallo + creamy chipotle sauce really takes them over the top 🤤

🥔 Seasoned Taco Potatoes
800g red potatoes, diced
1 tsp each: sea salt, black pepper, onion powder, garlic powder, cumin, paprika, chili powder, oregano
2 tsp avocado oil
Dice potatoes into small cubes, drizzle with oil, season, and toss. Spread on a parchment-lined baking sheet and bake at 400°F for 20–22 minutes until golden and crispy.

🌮 Taco Beef
800g lean ground beef
40g tomato paste
1 tbsp avocado oil
1 tsp each: sea salt, black pepper, onion powder, garlic powder, cumin, paprika, chili powder, oregano
40g shredded Mexican cheese
Heat oil in a pan over medium heat. Cook beef until browned. Stir in tomato paste and seasonings, then cook a few more minutes until juicy and slightly caramelized. Top with cheese.

🍅 Pico de Gallo
200g tomatoes, chopped
150g red onion, chopped
75g red bell pepper, chopped
75g green bell pepper, chopped
30g cilantro, chopped
½ tsp each: sea salt, pepper, garlic powder, cumin, paprika
Juice of 1 lime
Mix everything together and let those flavors come alive.

🌶️ Chipotle Sauce
100g Greek yogurt
80g avocado mayo
50g chipotle sauce
20g buffalo sauce
20g honey
¾ tsp each: sea salt, paprika, garlic powder
Blend until smooth and creamy.
Layer it all up and enjoy — perfect for meal prep or a weeknight dinner 💪🔥

**I just put the pico de gallo in the bowls ahead of time. You can store separately and use though out the week if you prefer to not warm.

** Put the sauce in a bottle and add when ready to eat.

Sweet potatoes are a staple in our home—and easily my favorite complex carb to enjoy every week. They’re incredibly versatile and fit seamlessly into just about any meal, whether it’s breakfast, snacks, lunch, or dinner.

I just simply dice them and sprinkle with sea salt, pepper, and a little paprika. I think the simpler the better but dietary restrictions also play a role for me.

This is our go-to way to prepare them, but honestly, I’ve never met a sweet potato dish I didn’t love!

This seasoned chicken breast has been a go-to in my kitchen lately. It’s perfect sliced over salads, paired with fresh fruit and veggies, or layered into sandwiches. I’ve been slicing the chicken thin before cooking, and it turns out super tender and versatile every time!

✨ Easy Seasoned Chicken Recipe ✨
• 1 tsp salt
• 1 tsp pepper
• 1 tsp paprika
• 1 tsp oregano
• 1 tsp ground garlic
• Drizzle of olive oil
Toss everything together until the chicken is evenly coated, then cook to your liking.
That’s it! Simple, flavorful, and pairs well with just about any meal.
