sunshine but it’s just as important in
the body too. Vitamin D is used in the
mineralization of bones by boosting

Many of our rishis and munis were scientists. They experimented, observed and wrote a great deal about how to live longer and disease free. They laid a lot of emphasis on food. According to them our kitchen has all the necessary stuff to ward off more than 80% of diseases. They said good, seasonal, local, fresh, home cooked and optimal food intake can keep one healthy and provide the necessary micronutrients namely, vitamins and minerals, required by a human body.

Let’s understand more about these micronutrients.

Vitamins and minerals can be divided into four categories: A). water-soluble vitamins, B). fat-soluble vitamins, C). macro minerals and D). trace minerals.

A9. Vitamin C (Ascorbic Acid): is a booster for the immune system. It helps to produce collagen to maintain connective tissues and heal wounds. It also enhances the absorption of iron from plant-based sources, which is crucial for vegans and vegetarians. It shows strong antioxidant properties. Additionally, it’s involved in protein metabolism — making it of interest to those who exercise. It reduces the incidence of the common cold.

Good sources of Vitamin C are: red peppers, orange juice, Kiwi fruit, broccoli, strawberries, tomato, cauliflower, all citrus fruits, potatoes.
