Tomato ๐Ÿ…, chilli ๐ŸŒถ and garlic ๐Ÿง„ soup - super simple, super healthy- doesnโ€™t even need stock!

You need:
1. 750g good quality organic tomatoes on the vine
2. 1 red chilli halved and deseeded
3. 5 garlic cloves
4. Olive oil
5. Salt and pepper

Method

1. Place all ingredients on an oven tray and toss in olive oil and a sprinkle of salt
2. Roast at 160 C until golden (about 20 mins)
3. Remove stems, slacks and garlic skin and put the roast veg in a blender with a small amount of water
4. Blend until smooth
5. Strain the mixture into a pot
6. Taste and adjust seasoning
7. Serve and enjoy!

No one should start a new way of eating thinking they are entering into a forever commitment to never have treats! Thatโ€™s why my PCOS diet builds in two treats per week. This makes a huge difference psychologically and allows enough flexibility to plan for birthdays, dinners out or just a Friday night in! This also means that itโ€™s much easier to stay on it and stay motivated so you can continue to improve your weight and PCOS symptoms without feeling like you have failed and give up!
