He also ran into a cabinet and has a bump on his forehead. It was a good day, though. We ate lunch at my sister’s family’s home after church and played by the river.

Not a distraction from, but a reason to keep going!
There will always be distractions. There will always be excuses. BUT there will always be the CHOICE to not let the distractions and excuses keep you from going forward. There is always a REASON to keep pursuing your God-given purpose and goals.
Just because I have excuses and distractions does not mean I have to give into them. When I do, it doesn’t mean that I have to continue to do so.

These workouts are wonderful and this boy makes them even more fun. He’s a huge motivation for me and I love that he’s right along with me as I get stronger; mentally, emotionally, and physically.
A little glimpse into this afternoon’s to-dos...
We loaded up our “buckets” with fresh milk after church so that we could make more yogurt. I knew I had to get my 4lbs if Chicken into the instant pot so I could clean it up for yogurt making.
Peeling and slicing carrots 🥕 because they are better than baby carrots - better in flavor AND nutritional value.
I ate the two handfuls of radishes I threw in with the chicken 🤭 they are SO delicious and highly underrated in the veggie world, but they are full of goodness and act like a potato when out in a roast or like I did here.
Another wonder-veggie is my dear spaghetti squash - such a fun and tasty one!
Venison meatballs almost caught me on fire - hot pad too close to the broiler when pulling them out 😬🔥
I just picked up some more eggs - some will be boiled for easy snacking today or meal finishers.
I have a few more veggies to slice and dice, but I am thankful for getting the things done I had planned ahead to do.
Guess what else?! Dishes are done - what a blessing to have a dishwasher on days like these.

What an awesome week it has been in our free group where we’ve been focusing on nutrition!
Healthy eating and balance can only be described as such if it is sustainable for real life. If you can’t maintain relationships, have a social life, or ever walk the middle road of overeating and under eating , then those are just a few ways that reveal imbalance and an unhealthy lifestyle.
It has taken me years to find a middle ground with food. Now, instead of living by food rules, I am able to make healthy choices and still enjoy treats, meals out, and social events.
I don’t have to be in fear of food and I don’t have to be obsessed about it either.
It’s a learning and maturing process everyday, but I’m sure thankful for the community of support I have. My family, friends, and teammates are motivation to live a balanced and healthy life in a sustainable way!
If you’re feeling imbalanced, unmotivated, frustrated, or discouraged in your efforts to live in good health, then I pray that you will reach out...not tomorrow, not next week, but today! Today is the best day to get free from bo***ge to food, negative thoughts, and frustrated living.

Sometimes supper doesn’t look that exciting, but your tastebuds cast their votes and deem it a win!
I saw a recipe for turkey meatballs to cook in pasta sauce, but didn’t have all of the ingredients on hand for the sauce...so baked meatballs with mushrooms and asparagus it was. The thing that surprised me was using cottage cheese in the meat mixture.
Having good ingredients on hand makes all of the difference in pulling a healthy meal together when your planning gets thrown off!
We ate the rainbow for supper!
There was a time in my life when you would have had to PAY me a lot of money to eat what’s on this plate. It wasn’t just the veggies I had a hard time with; I was just plain picky!
- When I entered middle school, the loads of junk I was eating began to catch up with me. I also started noticing that food was something I thought way too much about. If we were going to someone’s house or some event, my main thought was what food would be there for me to devour. My snacks looked like giant body builder’s cheat meals. After-school “snacks” didn’t keep me from seconds (or even thirds) of whatever was on the table at supper.
- It wasn’t until I developed another sort of disordered eating that many took notice. I had gone from a glutton to one who punished herself for eating more than her “allotted” calories for the day…don’t get in the way of her exercise either! I was wasting away, screwing up my body, and cheating death, but could not get free.
- Food isn’t something we can just avoid if we have an issue with it. It is necessary for life, yet has become one of the biggest contributor to sickness, disease, and even death in some cases.
- That’s why I am pursuing my passion to help others achieve TRUE health and balance. Not by teaching you the ways of the hottest diet trends or making you think exercise is life, but to truly develop a relationship with food that is neither control nor fear driven. Food is primarily for fuel, but it’s not to say that it shouldn’t be enjoyed.
- I am a person who now CRAVES these veggies as much as I crave peanut butter (anyone who knows me know that that has been my life-long favorite food). Eating the rainbow does not involve tearing into a pack of skittles, but it doesn’t mean that you can never have skittles either!
- I am offering a FREE week-long group to give you insight to the month-long group of building healthy habits that are sustainable!
- I’m so excited to come alongside you with educational videos, tips, and more so that we can maintain and sustain our health while living our best lives.

Vulnerability at its finest...at least for this lady. I took this during today’s workout (perhaps I should have done it on round one haha). The reason was to check form and, while not perfect, I am thankful for what my body can do and how far it’s come (especially after what I’ve put it through over the years).
We’re on a cleaning kick around the house and the sunshine, ☀️ paired with these salads for lunch, made it feel 💯 like Spring is already here!
I may be the sweatiest I’ve ever been, but I also feel the strongest ever; mentally, spiritually, and physically!!
- The BEST part about this program for me is the deeper understanding standing of God’s grace that I get every day when I press play. Crushing the lies of “I can’t” or that I won’t ever find balance with eating and exercise...it’s simply not true.
- This program may have obsession in it’s title, but it’s actually freed me from obsession.
- I’m dedicated to taking care of my body so that I am better able to accomplish all that He has for me. Freedom from obsession with numbers! Freedom from abusing my body. Freedom from the lies that bind me. Who’da thunk that exercise and nutrition would actually be what helped bring restoration to my mind and body exercise that was nearly destroyed by food and fitness?!
Phase 3 Cardio Core, you pushed me to push my body further than my mind sometimes wants to go. Thanks!

🍲 🍜 🥣 Often, the simplest supper; both in appearance and amount of effort it takes to put together, ends up being just the thing to “hit the spot!”
Sausage, leeks, cabbage, carrots, cannellini beans, bone broth, turmeric, and black pepper.
I just nursed our baby and laid him down of the night. When he wakes up, he will be ONE!
This morning was a fun one for me. I got up first (what’s new) and ate my breakfast and enjoyed my coffee. Then I got up close and personal with these items (so beautifully resembling a heart); including a new present! Slowly increasing weights in our “home gym” so I can keep pushing myself and finding just how strong I am through these workouts.
The variety makes it so fun. I find myself pushing myself for no other reason than for the joy of it. I’m not doing it for my body to be strong not to make it like someone else.
This coaching gig has done so much more for my mind and body, but that is ONLY because I’ve freed it up through letting God work BIG TIME in my heart.
So, on this Valentine’s day I’m just so thankful, grateful, joyful as I reflect on all of the love in my life. I’ve learned to love through Love Himself; thank you, Jesus. I’ve better understood His love through the love of my husband. I’ve learned to love more fiercely and be more selfless in this past year in my new title as mom.
So as this fun day winds down, I’m happy to say that I will continue to Lift heavy, Love big, Laugh hard, Listen intently, Learn continually, and Live boldly!

Pork Ragu - we are really loving our Instant Pot! I also made quark overnight and am curious what people who make their own yogurt like to use for straining; cheese cloth, nut-meat bags, coffee filters - what’s your choice?
This simple lunch was SO DELICIOUS!
Cabbage, sausage, carrots, mushrooms, and onions.
Bruno and Caleb had rice and I had shiritake noodles - can we have a repeat?
🔥When you become aware of something that really lights your fire, you would be smart to keep those “logs” in full supply. Another application of the same concept is a passion placed in your heart. 🔥Why would someone think that they are called to something like nutrition and fitness when it seems that so much of it is vanity?
🔥Your physique isn’t so much what I’m hoping you’ll perfect, but rather that you will find the peace & joy this life is meant to contain. I believe that valuing our bodies enough to keep them strong, well-nourished, and balanced is the least we can do for all He’s designed them to do for us.
🔥It’s a perplexing thought to know the compassion & love of serving I have even though I spent years allowing my physical flaws and mental struggles to imprison it. I was trapped in a place where worry, fear, depression, anxiety, insecurity, and low self-esteem gripped me. What was it all about? Selfishness and pride. I listened to lies that broke my confidence, isolated me, and kept me from having the impact I desire.
🔥I have a burning desire to help people understand their true identity. Not to come away with a big head or a lofty esteem of themselves, but to be balanced and know that they are a unique, precious, and beautiful creation.
🔥Nearly six months ago I made a decision to begin my journey as a coach with Beachbody to go along with my vision for working with people in achieving health and wellness. When I began my studies for Nutrition & Wellness Consulting I had no idea I would make this addition to it, but have found it can be the perfect fit.

Finished product from my last post...I thought I would post my sauce recipe based on what I threw in 🙂
Mongolian Sauce for Beef or Venison
* 3 cloves garlic, minced
* 1/2 tsp fresh ginger, grated (or equivalent dry)
* 1/2 C Hoisin (I used no sugar added BBQ)
* 2 T Rice Vinegar
* 1/4 C low sodium soy sauce (or coconut amigos-I did 1/2 of each)
* 1/4 C water
* 1-2 T Coconut Palm Sugar (or brown sugar)
* 2-3 green onion (scallion), sliced thin
Start by sweating minced garlic in a small sauce pan. Add ginger and cook for another 30 second. Add the rest of the ingredients; stir well and allow t simmer until the sauce reduces slightly (thickens and stickifies)
Add to a pan that you’ve allowed your veggies to cook 3/4 through after first browning the meat and setting aside.
The meat can then be added back in when you add the sauce. Cook another 2-3 minutes and enjoy!
Veggies used here = broccoli, cabbage, and onion.
Peppers, carrots, or Brussel sprouts are a few other tasty options!

The principal of seed, time, and harvest can be applied to any area of life. If I want to reap a healthy body, I eat (sow) good food into it. If I want to see my passion benefit others, I need to put the work in (sow) to see the fruits of my labor.
I am so thankful for the seed planted in my heart to pursue opportunities to serve others by helping them find wholeness, joy, and balance. I KNOW that if I keep sowing into that passion, I will see a harvest of transformed lives, hearts, bodies, and minds.

I’m fortunate to be in a coach test group for this challenge and it is challenging my heart, mind, and body in an eye-opening way. I am seeing more and more of what my body is capable of and, because I start my day developing my spirit and mind in a healthy way, I’m developing a greater confidence and appreciation in who God made me to be.

I heard a great message today that helped bring balance to the message given by our trainer. She was encouraging us to finish strong by going there in our minds and not allowing our bodies (and the intense burn they were feeling) to give in.
🔑 A fit body that is fed nourishing food doesn’t = optimum health. BUT when you combine those with a healthy mind and nourished spirit, you can achieve health and healing on the highest level. I’m thankful for the body God has given me and I train it in a way that gives me greater potential to accomplish His will for me!

The supper we had tonight was the cherry on top of a good day, and something new for us too. We had a great morning which started with Jesus, breakfast together AND Bruno did Day 8 of with me before the little man got up.
Now about that supper...It was Lemony 🍋Garlic Chicken 🍗 from which we had with cauliflower rice 🍚 and roasted chickpeas. Baby loved the leftover lemon that daddy gave him too!

It’s 35-50 degrees warmer than yesterday (now 26 F) at this time, but this warm soup 🥣 still hit the spot. I’m loving the ease and speed of our Instant Pot...also the fact that I’m less intimidated by it each time I use it!
In this pot:
- 3/4 cup dry lentils
- 1lb Chicken tenderloins (cut in 1in pieces)
- 3-4 medium carrots, chopped
- 1 large parsnip, chopped
- 3 small ribs celery, chopped
- 1 leek slice in 1in chunks
- 32oz. Bone Broth (chicken)
- Himalayan Pink Sea Salt and Fresh ground black pepper to taste
Dump everything in the pot
Manual High Pressure - I did this for 20 minutes (based on a recipe I found using lentils), BUT would try it at 10-12 next time...I prefer more bite to my veggies!
I eat whole, clean foods 99% of the time. After a month out of my kitchen while we were visiting family in Switzerland, I am back to choosing everything myself and my family eats.
I am so thankful that I was able to take something like Shakeology with me on our trip. I continued to get my daily dose of dense nutrition for snacks or breakfast which helped balance out some of the richer, less veggie-dense meals we ate there.
While I still got veggies every day, you'd be hard-pressed to find the superfoods packed into this shake without paying a HEFTY price...Switzerland is expensive enough ;)

I have to say, I am really missing the hot part of my breakfast. My usual is an “egg pancake” made with broccoli, pickled onion, hearts of palm, and, you guessed it, eggs. I eat it with goat cheese and salsa. The combination may sound weird to some, but I crave it from breakfast to breakfast!
I COULD make it here, but cooking in the morning isn’t typical here. The smell of broccoli and eggs cooking in the morning might not be the best idea either, when you’re a guest in someone’s house.
What I am LOVING is the fact that I am reunited with a food I fell in love with while living in Switzerland. The best version can be purchased in Coop (a large supermarket chain). It’s called Magerquark - Quark is the name, but Magerquark just means it’s lower fat quark. It tastes so rich and is often categorized as a soft cheese. It’s used in so many recipes over here, but I love it on it’s own with just a spoonful of the same store’s Natur Jogurt. I just so happen to have packed my Peanut Butter balls, so I eat it with that for breakfast and a bedtime snack.
I’ve been searching Pinterest for a good recipe to bring this delicious quark into our kitchen back in Minnesota. Maybe Coop will send me a good supply each week; no charge since I’m it’s biggest fan? ;) If only!
I’ll be posting a recipe soon! After I’ve been home and tried it out myself, I’ll let you know how it compares.
I am feeling rather productive today!
Woke up at 6, made my husband's mid-morning sandwich, read my Bible, prayed, and ate my breakfast.
Then the little guy woke up and had some breakfast too. We cleaned up, got dressed, mommy did her workout while baby played.
I had a quick snack and finally got around to making my peanut butter, followed by my beloved peanut butter balls!
After that clean up was done we had to get started on lunch since grandma wasn't going to be home to cook it before Bruno and Bruno's dad came home from work for lunch.
