Caramelised onion and crispy bacon pasta
Serves: 4
Prep time: 10 minutes
Cooking time: 30 minutes
This dish needs a bit of patience, but it is greatly rewarded. To caramelise onions properly you need to take your time, but the result is spectacular. So, take your time, slow down and treat yourself to this rich, decadent dinner, worth every second.
3 Tbsp butter
2 Tbsp olive oil
4 large white onions, sliced thinly
1 sprig Fresh thyme
½ tsp brown sugar
200 g streaky bacon, diced
300 g Pasta Grande spaghetti
1/3 cup Parmesan cheese, grated
1/3 cup cream
Salt and pepper to taste
Chopped fresh parsley
1. In a nonstick pan, heat the olive oil and butter on a low to medium heat.
2. Add the onions and thyme, sprinkle with the brown sugar, cook on low for about 35-40 minutes stirring occasionally until the onions are golden brown and caramelised. This must be done on low heat as not to burn.
3. While these are cooking, fry your bacon in a not stick pan on medium heat until crispy. When it has crisped up set aside on a paper towel to drain.
4. Cook the spaghetti according to the packet instructions and set aside, reserving a cup of the pasta water.
5. When your onions are done add the spaghetti to the pan and stir to combine.
6. Add your pasta water a little at a time while stirring until sauce has thickened.
7. Add the parmesan and the cream, stirring until the pasta is fully coated and the cheese has melted.
8. Top with the crispy bacon pieces.
9. Add salt and pepper to taste and serve with chopped fresh parsley.

Sharp skill. Local wood. Every knife tells its own story. Product of Paul Richards my wonderfully talented father. 🔪🗡️❤️
I’ll have them at the Harkerville market on Saturdays, or DM me if you have questions.

First time trying the viral whipped coffee 🤤☕ I'm hooked! This with a bit of homemade vanilla cinnamon syrup is just *chef's kiss*.

Going to be working on a little something different today. My incredibly talented father makes beautiful knives with indigenous wood. I'm going to be working on some product photos so I can showcase them.

I had the best time making these custard slices from cook book. They are famously called "one bite" custard slices because you are supposed to try fit a whole on in your mouth after slicing? I tried and failed, I have alot of really unflattering pictures to prove it 😂 Stellar recipe Karl I I really enjoyed it and my family is loving them!

They say this dish is so good, it could inspire a marriage proposal and honestly, I believe it. The first time I made Marry Me Chicken Pasta, I wasn’t aiming for anything dramatic. I just wanted something creamy, comforting, and packed with flavour. But one bite in, and I knew I’d stumbled onto something special.
It’s the perfect mix of chicken, sun-dried tomatoes, garlic, and a silky cream sauce that wraps around each piece of pasta like it means it. There’s a hint of heat, a touch of sweetness, and a whole lot of wow. Whether you’re cooking for someone else or just spoiling yourself, this is the kind of dish that says "you deserve something a little extra tonight."
1 Tbsp olive oil
400 g chicken breast, cut bite sized
1 white onion, dice
4 cloves garlic, minced
2 tsp Italian seasoning
1 tsp Smoked paprika
1 tsp chilli flakes
150 g sundried tomatoes, chopped
300 g penne pasta (I used )
2 cups chicken stock
1 cup cream
Salt and pepper to taste
1 handful fresh baby spinach
1 handful fresh chopped basil
Fresh grated parmesan to serve
1. Heat olive oil in a pan. Brown the chicken and set aside.
2. Saute the onion and garlic until fragrant and soft.
3. Add the herbs, paprika and chili flakes, stir through and add back your chicken.
4. Add the sundried tomatoes.
5. Add the uncooked pasta and toast a little before adding the stock and cream.
6. Simmer on low until pasta is just cooked (Al dente)
7. Stir through the baby spinach and basil.
8. Serve immediately with fresh grated parmesan.
