Falafel bowl filled with couscous, chickpeas, hummus, avocado πŸ₯‘, peas and parsley 😍. Topped with a sauce made of hummus, tahini, lemon juice and water πŸ˜‹For me one of the best combinations in the world πŸ€©πŸ˜‹. The falafel recipe is already on my blog and you can find the link in my bio or in my story. Do you prefer couscous or rice? 😁.
I hope you all had a wonderful weekend? I went to my parents and we celebrated my moms birthday πŸŽ‚, had a great time today with my friends at brunch, enjoyed a long walk in the park with David and now it’s time to relax and watch a movie 😍😁. To make the dill chicken salad add some cooked shredded chicken breast to a bowl and mix in some plain whole milk yogurt (as much or as little as you like), chopped celery, fresh chopped dill, celery salt and cracked black pepper to taste. So easy to make and always comes out so yummy. Hope you’re having a good day!

Winter Vegetable Pasta πŸŒΏπŸƒ filled with colorful veggies and spaghetti for the best of both worlds πŸŒΏπŸƒ
I made this with beautiful rainbow tomatoes and spiralized butternut squash, green squash, and yellow squash. You can just use regular cherry or grape tomatoes, and use chopped squash of you don't have a spiralizer at home (or can't find them at the grocery store). β€πŸŒΏπŸƒ
1/2 lb. spaghetti
1 cup brussel sprouts sliced lengthwise
Oil for roasting

1 onion finely chopped
1 tsp salt
3/4 tsp pepper
2 tsp + 3 tbsp olive oil
1/2 - 1 tsp garlic powder to taste
1/2 cup white wine
1 1/3 cup tomatoes sliced
1 cup butternut squash noodles
1 cup green squash noodles
Juice of 1 lemon
2 tbsp fresh parsley finely chopped

Cook pasta to al dente. Meanwhile, roast the brussel sprouts in a 400 degree oven on a large tray until tender and browned, by sprinkling them with oil, toss, and a generous dash of salt and pepper. During their cooking, toss halfway and cover with foil if getting too browned).
Also meanwhile in a large pan, add onion, salt, pepper, 2 tsp oil, and cook until translucent, adding bit of water if needed. Add garlic powder, white wine (or sub vegetable broth) and let bubble until most of wine is evaporated (let a couple tablespoons remain). Add tomatoes and butternut squash noodles, cook 5 min, stirring often. Add all remaining ingredients including spaghetti and roasted brussel sprouts, toss to thoroughly mix together. Garnish with more parsley if desired. πŸŒΏπŸƒ. 🍜

Recipe:
Dip avocado halves in sesame seeds and fill with: diced yellow pepper, cucumber, purple daikon and edamame mixed with sesame oil and tamari. Add some sliced radish and microgreens. Sprinkle with crumbled nori (even better if you can find the wasabi flavored kind!) and even more sesame seeds. Serve with a splash of tamari. Enjoy!

This meal was super easy to throw together and SO full of flavor!

β˜† Thai Turkey:
1/2 lb ground turkey
1 tsp garlic, minced
1/4 tsp ginger
1/2 tsp red pepper flakes
2 Tbsp peanut butter
1 Tbsp lime juice
1 Tbsp soy sauce or coconut aminos
1/2 Tbsp sesame oil

Cook ground turkey in skillet until no longer pink. Add remaining ingredients and heat until combined
β˜† Asian Slaw:
1 cucumber, spiralized
1 cup cabbage
1 bell pepper, thinly sliced
2 green onion, chopped
4 Tbsp sesame oil
1 Tbsp red wine vinegar
1/2 Tbsp So Nourished granular sweetener
1 Tbsp soy sauce
1 Tbsp water

Mix all until combined

PAPRIKA LIME SALMON & (Dairy-Free) FLUFFY CUMIN-SPICED MASHED POTATOE Happy Monday!

Deets: For the salmon and tahini sauce POTATOES: 1.5 pound gold potatoes (peeled and chopped), then covered with water and boiled for 12-15 minutes until tender. Drain the liquid, then using a potato masher (or large fork), mash and stir. Once they are mashed evenly, gently stir in 1.5 tablespoon ghee or coconut oil (use coconut for dairy-free), 2 tablespoon sour cream (dairy-free if needed), 1/4 cup unsweetened cashew milk (or other dairy free milk), 1/2 teaspoon salt, 1/4 teaspoon cumin, 1/4 teaspoon garlic powder and pepper to taste.
