Another simple VEGAN lunch 🥙🍅
Fueling my body with some healthy plant protein 🌱 💪
• Mixed salad
• Chickpeas
• Tofu scramble
• Purple cabbage slaw
For the slaw, I thinly slice purple/red cabbage (why is it called red cabbage when we all know it’s not 🤔)
Then add:
➡️ 3TBL apple cider vinegar
➡️ 3 TBL nutritional yeast
➡️ 2 big TBL tahini
➡️ mix & devour 👅
You can make all this at the start of the week then simply add to salad all week long for
I don’t like to prep all my meals but this saves me loads of time when I’m most busiest with my kids

Do you worry that fruit has too much sugar?
We’re ready & excited to tuck into this delicious fruit platter 🍓 🍍 🍇 Thank you to the lovely staff .
Fruit is one of the most cleansing, healing & detoxifying food types to eat...not to mention delicious 😋
I remember when I was all about the low carb lifestyle that I used to think fruit had ‘too much sugar & carbs’ so I’d restrict.
It’s seems so silly now, I mean the fact that it’s grown in nature says a lot 🤦♀️
Sometimes we get so caught up in the latest diet trends that we overlook the most obvious things
1) That fruit is grown in nature by Mother Earth 🌍
2) That the species we share nearly all our DNA with, eat fruit as their main food group
3) That our entire biology & biochemistry (saliva/ teeth/digestive tract etc) support fruit & carbohydrates as its main source of
energy
If you think about it from a logical perspective you don’t need to be a nutrition expert to know that fruit is healthy 👍
Since eating an ABUNDANCE of fruit, my health has only improved!

We’ve had a great chef looking after us creating delicious Asian recipes 😋
Just goes to show that if you don’t ask you don’t get
To be honest, the buffet wasn’t the most vegan friendly (as expected for a business hotel) but there was one chef in particular who was very accommodating 🍜 🍚 🥦
After only one night asking if there was any vegan alternatives, the chef HAPPILY whipped some dishes up for us 😊
When I first went vegan I used to worry about asking chefs for vegan food.
Seriously though, I’ve NEVER had a problem, only the opposite.
Most chefs I’ve talked to actually enjoy creating vegan food because it’s a way for them to be creative 💫
At the end of the day, you get to choose the food you eat. No one else lives with your body so eat the foods that nourish you, not because you’re trying to fit into social ‘norms’

I wanted to talk to you very openly about something...
I used to HATE working for other people. Yes, I know how that sounds
I though there was something wrong with me, I was constantly bouncing from one job to another but I was never happy
I seriously wished that I could just be happy with doing a “normal” job...but I really wasn’t
Now there’s absolutely nothing wrong with working for someone else and loving it ❤️
But if it’s not lighting you up every single day, maybe it’s time to question things & change things up
Being an entrepreneur isn’t easy. And it certainly isn’t for everyone
But if you feel like there’s more to life than working a job you hate and you really feel like there is something g more for you, then know that THERE IS!!!
There are so many possibilities & opportunities available for you! 💫
I never thought that I would be doing what I’m now doing. I literally used to think “I wish I could get paid to get fit”.
I wanted the time FREEDOM, to work on my terms and to be able to work anywhere in the world
I wanted to help people change their health because it’s truly changed my life & I want to give that back to others
I wanted to pick the people I work with. To be surrounded by positive people who are uplifting & supporting each other.

4 WEEKS...
It’ll be 4 weeks that I would have eaten at an all you can eat buffet, breakfast, noon & night. Someone send help! 😱
I know it’s a totally to have but I am SO FED UP OF EATING 😂😂
If this was me in my early 20’s I’d probably be 4 stone heavier 😂
Yet here I am, 2 kids later and the healthiest I’ve been and the HAPPIEST I’ve ever been in my body and mind!
What changed?... I got educated, I changed my eating habits and let go of foods that send my cravings UP THE WALL!
I let go of perfectionism. I decided to keep moving forward in the right direction and to just bloody enjoy my life and not worry about what I’m eating!!
I don’t let one bad choice derail me, I just keep making better choices whenever I can because I love myself.
That last part may sound alien 👽 to you but you should embrace how wonderful YOU are! Love yourself, take care of yourself and feed yourself the best things you can because you are worth it!
That’s my pep talk for the day 🤘😂

Vegan Curry with “half n half”
If your British it goes without saying half and half is always a winner when it comes to curries..
If your not British, I’m talking about half rice half chips. It sounds like a weird combo but it’s delish👌🏻
I made these chips/fries OIL FREE
That’s right, no oil and they’re still nice and crispy 🤤
You might be wondering why I don’t eat oil...oil is NOT a healthy food. In fact it’s extremely processed & all the hype about how good it is is down to good marketing.
Oil literally has NO nutrients. It’s stripped of vitamins, minerals and fiber until just the pure FAT is left.
“But olive oil is healthy”..NOPE, olives are healthy! Same with coconut (not coconut oil) and all the plant fats 🥥 🥑 🥜
If you have issues with acne, can’t lose weight & have health issues..remove oil from your diet and 😊
You can still eat fat, just choose unprocessed whole food forms!
Who else thought oil was healthy? 🖐

FITNESS/NUTRITION/MINDSET challenge Day 1-7 update 👇
As a recap Incase you didn’t know..for the month of October I am committing to taking the time for myself to do things that nourish me.
✔️ I’m ramping up my nutrition (meaning I’m eating a sh*t done of veggies) & other things 🥬 🥦🥑🍋🍉
✔️I’m moving my body daily by doing a planned workout (from a catalogue of online fitness classes I use) OR yoga 🧘♀️
✔️ I’m meditating DAILY No.matter.what 🌝
So how’ve I done?
Nutrition wise I can whole heartedly say that I’ve eaten my body weight in veggies every day.
To be honest, nutrition isn’t something I struggle with and eating more veggies really does make you sparkle from the inside out. I’m having less cravings, have less bloating and lots more energy 👌🏻
Fave meal so far.. baked fries, buffalo cauliflower & a large mixed salad which I had today because and I didn’t cook it! At long last! 😂 🥔
Exercise wise...I’m not gonna lie, it’s been hard to get back into things after some inconsistencies! 🥵
I modified A LOT and took beginner levels to get me through it. I also totally forgot about the weekend 🙊 but I clocked up a lot of steps shopping...does that count? 😂
I really enjoyed each class and felt SO food after and really proud of myself for prioritising me (and not the never ending washing up!) 👏
Meditation: The bit that makes the most difference to me! Meditation has kept me grounded & looking for the positives when I could easily get irritated ✨
I felt ‘off’ today and realised it was because I didn’t mediate over the weekend.
Which shows that even if your really into wellness, we can still forget things. Which is why it’s so important to schedule things in and get accountability!
